Pumpkin Oatmeal Bake

Before I started reading food blogs, I never quite knew what oatmeal was capable of.

Overnight Oats
Savory Oats
Regular Oatmeal
Carrot Cake Oatmeal
Melted Banana and Peanut Butter Oatmeal
Oatmeal Pumpkin Pancakes
Oatmeal Banana Pancakes

All delicious.

All simple, wonderful oatmeal creations that make breakfast something to love love love.

Oatmeal bakes are no exception. This recipe lets you escape bland, boring oatmeal by replacing it with an oatmeal cake. Life is more fun if you’re excited about what you’re eating. And if what you’re eating makes you feel great…it’s a win win.

What more could a person need?

Toppings you say?

Oh there are toppings.

 

Pumpkin Oatmeal Bake

Yield: serves 1

Ingredients:

1/2 cup old fashioned rolled oats
1/2 tsp ground cinnamon
pinch of ground nutmeg
1/4 tsp baking powder
pinch of salt
1/2 cup milk
1/3 cup pumpkin puree
1 egg
1 tablespoon honey
1/4 tsp pure vanilla extract

toppings
drizzle maple syrup
peanut butter

Directions:

Preheat oven to 350ºF.  Combine oatmeal, cinnamon, nutmeg, baking powder, and salt in a small bowl.  Add in milk, pumpkin, egg, honey, and vanilla.  Once thoroughly combined, pour batter into a greased oven safe ramekin.  Bake for 20-25 minutes, or until oatmeal is set and puffy.  Remove from oven and top oatmeal bake with toppings.
