Expansive Raspberry-Almond Butter Oats

The more the merrier.

Unless we’re talking about Monday mornings, Twilight movies or sandals worn with socks.

In which case, more is not merrier.  It’s just painful…and depressing.

But we’re talking about oatmeal.  Fluffy, dreamy, filling, expansive oatmeal.

The key to this oatmeal is allowing it to sit overnight in your fridge.  That way, the oatmeal absorbs extra liquid and becomes fluffier.  A normal 1/2 cup serving expands to 1 cup+ of oatmeal deliciousness.  Try it!  Your oatmeal will never be the same.

Expansive Raspberry Almond Butter Oats

serves 1

1/2 cup old fashioned oats

1 1/2 cup water

1 Tbsp chia seeds

1/2 large banana, thinly sliced into as many slices as possible

1 tsp vanilla

6 raspberries

1 spoonful almond butter

The night before, place oatmeal and water into a resealable Tupperware container.  Cook oatmeal in the microwave for 3-4 minutes.  Watch closely and stir occasionally so your oatmeal doesn’t overflow.  The oatmeal will still seem really liquid-y but it’ll thicken overnight!  Mix in chia seeds, banana and vanilla.  Cover and place in fridge until morning.

When ready to eat the next morning, reheat in the microwave for 1-2 minutes.  Top with raspberries and almond butter.  Enjoy!

This makes ALOT of oatmeal!  But you still only used a 1/2 cup of raw oats!

  2. Made this for breakfast today. Genius, pure genius. Loved every bite and the fact that it was only 1/2 cup raw oats. I topped mine with almond butter and strawberry jam. I will be definitely making this again!
