Macadamia Nut & Honey Oat-less Oatmeal

Today it was 90 degrees outside.

Yes I realize this looks odd.

I should be craving refreshingly chilly smoothies and ice-cold overnight oats.

But no.

Instead, I’m craving something hot.

Why?

Because this bowl full of fluffiness is just that good.

For serious.


Macadamia Nut & Honey Oat-less Oatmeal

serves 1

This is a great breakfast to mix up your normal oatmeal routine.  It’s made with ground flax seed instead of oats to help you start your day off with some plant omega-3s.  Plus, it’s gluten free for any gluten sensitive people and will keep you full right up to lunch.

Inspired by Carrots n’ Cake

1/2 cup almond milk

3 egg whites

2 Tbsp group flax seed

1 banana, mashed

1 tsp cinnamon

1/2 tsp vanilla

small handful macadamia nuts

drizzle of honey

Thoroughly whisk together egg whites and almond milk. (You don’t want pieces of cooked egg whites to show up in your ‘oatmeal,’ so whisk until your forearm muscles cramp up:))

Mix in the ground flax seed, mashed banana, cinnamon, and vanilla. Pour mixture into a sauce pan and heat over medium heat, stir frequently. Cook until the mixture thickens to a oatmeal consistency.  About 7 minutes.  Serve topped with macadamia nuts and honey.

      Thanks:) It was great…the next morning I had the same breakfast but put it in an almost empty almond butter jar. It was one of the best things ever:)
