Avocado Tuna Tacos

In high school, I used to eat tuna straight out of the packet.

I ate far too much tuna mostly because it was so quick and easy.

Even if it was bland and boring, I would eat it because it was seemingly healthy.

After high school, I said I would never eat packaged tuna again.

I was so sick of the stuff.

But then I added avocado to one of those packets and BOOM…now I’m right back to eating tuna packets.

Except now I’m eating them because they taste so good.

Mercury poisoning here I come.

Just kidding. I try to only eat this perfect lunch once a week:)

Avocado Tuna Tacos

inspired by How Sweet It Is

1 package tuna, in water, low sodium
4 cherry tomatoes
1/3 large avocado
pepper
2 corn tortillas
optional: lime

Chop tomatoes into halves and/or quarters. In a bowl, combine tuna, tomatoes, avocado, and pepper. Once thoroughly mixed, fill 2 corn tortillas with the tuna mixture. Serve with lime slices.
