The problem with healthy dessert…
I eat too much because they are ‘healthy’.
This healthy dessert is basically just oats, fruit and nuts.
All three things are totally acceptable for a healthy snack.


You see. They’re healthy.
Like Michelle-Obama-would-be-proud-of-me-for-eating-these healthy.
I’m gonna go get another.
No-Bake Superfruit Crumble Bars
makes 12 bars
adapted from the brilliant Healthy Food for Living
2 cups oatmeal (gluten free if needed)
1 cup almond, raw
scant 1/4 tsp salt
1 cup raisins, packed
1/4 cup coconut oil, melted
1/3 heaping cup Crofter’s Asia Superfruit (or your favorite jam or jelly)
Prepare a 8-inch square pan by lining with parchment paper or spraying with cooking spray.
In a food processor, blend oats, almonds and salt until crumbly. Add in raisins and blend until raisins are no longer visible. Add in coconut oil and blend until a crumbly dough is formed. Reserve 3/4 cup of dough but pour the rest into the prepared 8-inch square pan. Firmly press the mixture into the bottom of the pan. Spread your jelly on top of this dough layer. Sprinkle remaining dough over jelly and gently press it into the jelly.
Cover and chill for an hour.

Those look delicious…. must try them especially with my kids! NOW… off to check out that quinoa salad next!
If your kids love doughy things they will love these! I know as a kid I was all about the cookie dough:)
