Cornbread with Roasted Sweet Potatoes & Raisins

Here was my thought process…

“Hmm cornbread sounds good.”

“Mmm yeah.  Like a really moist and doughy cornbread.  How could I make cornbread more moist?”

“I’ll add cheese.”

“Oh wait, my body hates cheese.  Lame.”

“Gahhhh why do I love dairy so much?  Especially ice cream.  And it’s hot outside.  Yeah, I could definitely go for some ice cream….and a lactaid.  Ohmygosh remember that Sweet Potato Toasted Marshmallow Ice Cream you’ve been wanting to make for a year?”

“Hmm. Sweet potatoes are kinda the same color as cheddar cheese.”

“Holy crap…what if I put sweet potatoes in the cornbread!  That’d be delicious.”

“And then I’ll drench the whole thing in honey.”

Cornbread…perfected.

So much so that it only needed a drizzle of honey, as opposed to being drenched.

But I wouldn’t judge you either way.

Cornbread with Roasted Sweet Potatoes & Raisins

makes 12 pieces of cornbread

inspired by my appetite.

1-20 oz bag of cornbread mix

1 sweet potato

1 Tbsp olive oil

1/2 tsp pepper

1/4 tsp salt

1/3 cup raisins, packed

Preheat oven to 425F.  Peel the sweet potato and chop it into small cubes.  Toss the sweet potato cubes with the olive oil, salt and pepper.  Spread in a single layer on a baking sheet and roast for 45 minutes, flipping halfway through.

During the last 15 minutes of baking, prepare the cornbread mix according to the package directions.  Once the sweet potatoes are finished roasting, stir the sweet potatoes and raisins into the cornbread batter.  Spray a 9×9 baking dish with cooking spray and pour in the batter.  Bake according to package directions, about 25 minutes for me, or until the top is golden brown.

I love that I was just reading your post on my google reader, as usual, and saw the mention of sweet potato marshmallow ice cream and was like ‘Ive made that!’ I doubted that the links were to me but I rolled my mouse over it anyway and BAM!!! THERES MY BLOG! So sweet and awesome. Thank you :))
    The cornbread looks right up my alley. I need to get more carbs in my life to fuel these workouts and this is perfect. I have never seen such a unique corn bread recipe!

    • Oh please! Thank YOU for the great recipe! It’s one of the only recipes I could find that didn’t have a ton of heavy cream. I’m trying it out as soon as I get my hands on an ice cream maker:)
