The happiest breakfast on earth…

No matter how old I get, I don’t think I’ll ever reach an age where Disney isn’t comforting.

Because many times, comfort is found in the simple things.

For instance, a mickey mouse waffle maker.

…and, more importantly, the mickey mouse waffle…all grown up.*

*No, there is not alcohol in these.

Mickey Mouse Protein Waffles

serves 2 (…if you’re going to top them with greek yogurt, nut butter, fruit, etc. Otherwise, these just serve 1.)

inspired by the of-so-very-creative Edible Perspective

1 1/2 Tbsp ground flax

1 Tbsp coconut flour

1 scoop chocolate protein powder

1 egg + 2 egg whites

3 Tbsp almond milk

1/2 tsp cinnamon

1/2 tsp baking powder

Beat eggs.  Add in remaining ingredients and mix until thoroughly combined.  Allow batter to thicken for 10 minutes.  Pour batter into your hot waffle maker and cook until done.  Top hot waffle with your favorite toppings.

I topped mine with plain greek yogurt, blueberries, raisins, & a drizzle of maple syrup.  Served with a side of strawberries and macadamia nuts.

  1. Ooo yum! This is so nostalgic for me. When I was little my sister and I used to get Mickey mouse “shaped” pancakes that my grandma made and we LOVED it! I will totally try this recipe when I get a waffle maker!

  4. The kid I used to babysit when younger used to want batman pancakes and his mom bought them all the time (they were a “speciality item” at the time). Imagine a Batman waffle maker, ha.

    What kind of protein powder do you use? And how many grams is in one scoop? (20 g or 30 g scoop?).
