Brown Jasmine Coconut Rice

If there is one thing life has taught me…

It’s that you should never pass up a parking space when you’re hungry.

If it’s Friday night (which it is).

And your in the tiny parking lot of your favorite restaurant (which I will be because cooking on Friday night never happens).

And I’m hungry (this goes without saying).

Passing up that parking space is unwise.  That could be the very last space.  Like in the entire parking lot.*

And you might have to wait a whole ten minutes(!) to find another space.

And in that 10 minutes, 10 other cars are going to pull into the fore mentioned parking lot and they will all be out to get you and your parking space.

You see what Houston traffic has done to me?

It’s given me road rage and this paranoia that everyone is out to get me…and my parking space.

I would love to live somewhere where I could walk to restaurants and the gym and the grocery store and only have to use my car rarely.

And then I remember it’s 95+ degrees here…at 9 a.m.  Walking anywhere will result in heat stroke.

Hmm my choices are heat stroke or angry parking lot space stealers.

Maybe I’ll just stay home.  And make this rice again.  That would make it 3 times in one week.  It’s just so creamy.

Like butter-mixed-with-whole-milk-poured-on-top-of-ice-cream creamy.

Except it’s dairy free.

Dear Coconut Milk,

Brown Jasmine Coconut Rice

serves 4

[adapted from How Sweet it is]

1 cup jasmine brown rice
1 can light, coconut milk
1/2 cup water
2 Tbsp shredded coconut
1/4 tsp salt

Combine the rice, coconut milk, water, shredded coconut, and salt in a saucepan over medium-high heat. Bring the mixture to a boil. Reduce to a simmer and cover for 50 minutes, stir occasionally.

[Note: Double check your bag of rice for the proper cooking time.  If you purchase a quick cooking rice, you won't to simmer for quite as long.]

    I love,love,love coconut and finally purchased some coconut milk lately,but actually,I wasn’t really sure what to do with it… Until now! Your coconut rice sounds like rice pudding,which I love,and I can’t wait to try it. I wish I was at home tomorrow to get cooking…

    I don’t like coconut – at all – something about the texture… but I DO like soups with coconut milk and I LOVE coconut rice. There is an African restaurant here that does it with vegetables mixed in. I’ve been wanting to do some things with coconut milk, but not really sure how to use it. Can’t wait to try this (without that shredded coconut)!

      My dad is the same way. A self-proclaimed coconut hater. I think I need to make this rice for him just to see if it’s the texture or the taste he’s hating on! If you try it out, let me know what you think:))
