Blueberry & Macadamia Nut Guacamole

You think you know a person.

And then they tell you things like they “don’t like eating avocados alone.”  Not alone like by themselves in a room. But alone meaning taking a spoon and eating the avocado plain.

The said person claims that he “only like[s] avocados when they’re in things. Like on a turkey sandwich or in guacamole.”

This person that I’ve been dating for the last 5 years also says he “just doesn’t like chunks of avocado by themselves.”

Seriously.

I mean, it’s not a deal breaker, mostly because I’m still in shock and I’m not sure how to react.

It’s like when you go to take a drink of something thinking it’s almond milk and you take a sip only to realize it’s water.  It’s just not what you expected to find.  And at first it freaks you out and then it makes you depressed and then you accept it.

I’m moving into the acceptance stage.*

Hopefully our kids get the imma-eat-that-avocado-plain-with-nothing-except-a-spoon gene. Mainly because it makes life just that much more fun.

Blueberry & Macadamia Nut Guacamole

serves 2

[inspired by this perfection]

1/2 large avocado, cubed
1/4 cup blueberries
1/4 cup macadamia nuts, roasted and salted with sea salt
1/2 small lime, juiced
3 sprigs cilantro

Roughly chop macadamia nuts and place into a medium bowl. Remove the leaves from the cilantro stem and add to the bowl. Toss in cubed avocado chunks and blueberries, stir all ingredients together. Squeeze in the lime juice and stir until incorporated. Cover and place in the refrigerator for an hour to allow flavors to marinate (or for shorter or longer depending on how hungry you are).

Serve with chips…or just a spoon.

  1. My silly Hubby has been saying the exact same thing for a year now, and I just can’t comprehend it. Guess I’m still working through the acceptance stage.

  2. I eat at least 1/2 to 1 whole avocado per day. In or on everything. By itself. Love it.

  4. this combo looks perfectly swell! Haha I love eating avocados (solely by myself and solely pure avocado). The last festival I went to, I was eating avocados with a spoon under a tree. Very enjoyable :)

    • I’m glad you agree with me:) and haha I’ll have to try eating an avocado under a tree…sounds like some sort of happy, wonderful, peaceful meditation:)

  5. lol haha I’m with your boyfriend here, I can’t stand eating avocado by itself. I have to mash it or put something it. -gags-
