Greek Yogurt Chicken Salad (for your sandwich or sweet potato).
Growing up, I had this friend who was the nicest guy…
…unless you brought mayonnaise in his car.
If we were on a road trip and your sandwich had mayonnaise on it…just get out, like now.
And, honestly, I always hoped I would end up in his car on these trips because I’ve never been a big fan of the stuff either.
He had this passionate hatred for mayo. And could (and would) go on and on about how detestable it was. He was your normal big tough guy until mayonnaise was brought into the picture. And then he was on his knees begging for you to get away…or more accurately, driving one handed as he tried to grab and throw your sandwich out the window.
He didn’t care how good that bacon on your BLT was, if it had mayo on it, it was about to be thrown out of the window.
And chicken salad sandwiches…don’t even get him started. Those have a lot of mayonnaise. That’s a lot of hate.
So with my mild mayo dislike, I’ve never been a huge chicken salad fan either.
But for some reason it’s been sounding good lately. Which is really just you know like weird because I can’t even remember the last time I ate the stuff. But I’ve been mildly obsessed with putting greek yogurt on things/into things lately-so I started craving some chicken salad made with greek yogurt. I didn’t even want a chicken salad sandwich, I just wanted chicken salad, period.
After I made it, I ended up wanting something to put it on. So I did this…
It was good.
And isn’t that just the cutest little baby sweet potato you’ve ever seen!?
Greek Yogurt Chicken Salad
serves 3 (makes ~3 cups)
1 large chicken breast, cooked, cooled, and chopped
1/2 cup plain greek yogurt
2 Tbsp dijon mustard
1/2 lemon, juice
1/8 tsp dried dill weed
1 stick celery, diced
4 celery leaves (from the top of your celery stick), minced
2 Tbsp red onion, diced
1/2 cup apple, cut into chunks
1 heaping Tbsp raisins
6 walnuts, roughly chopped
8 grapes, sliced in half
In a large bowl, combine all ingredients. And done.
Haha! I have never liked mayo, so this looks right up my alley! By the way, your pictures are gorgeous!

Err, that’s pretty much a genius sub for mayo. I LOVED mayo as a kid, especially to dip asparagus or artichokes in. Not such a fan these days, but I love making a vaguely similar substitute with silken tofu + lemon juice + spices. I also adore that green bowl–where did you get it??
Anthropologie…Their clothes are beyond expensive but their dishes are usually not too ridiculously pricey:)
I am so with you on trying to figure out every possible way I can use greek yogurt as a substitute for other ingredients. A recipe calls for sour cream. Nah, I’ll use greek yogurt. A recipe uses heavy whooping cream. Hmmm, let me see, I’ll use greek yogurt! :D Btw, that chicken salad looks amazing!
Haha it’s so versatile:) I’ve never thought to use greek yogurt instead of heavy whipping cream…that’s fun!
And lately I’ve been obsessed with mixing greek yogurt + hummus and putting it on a roasted sweet potato…I can’t stop!

This chicken salad recipe is amazing!! I love how it is so chunky and doesn’t make you feel gross after eating regular chicken salad (with all the mayo). Today for lunch put the chicken salad in a sweet potato and it was like perfection to the max!! I’m already making some more for this week!

This is an awesome recipe! I love it! I was looking for a good quick lunch that I can make one night and bring to work the next couple of days and this is exactly what I wanted! I think i’ll use this as a base recipe and start changing some things up in it, for instance I like to put sliced almonds instead of walnuts! :)
