You know when you’re going along having a great day and then BAM!
Disaster. Well not really a disaster but a less than ideal situation body slams its way into your life. Yes, that’s what this was. An unfortunate body slam. Is that repetitive? Is there ever a fortunate body slam? Anywho.
So after my pilates class earlier this week I was in the parking lot walking to my car and I dropped my phone. No biggie. I drop my phone all the time. That’s why I have this nifty case to keep it from breaking. Wait. What is that? Why is there shattered glass on my phone? My screen! The entire bottom half of my screen is shattered!
Hellloooo, Mr. OtterBox? You just totally failed me. How you not gonna protect my screen?!
On the not so bummer side of things, both my sister and boyfriend claim to “know a guy” who can take care of things like this. Sounds sketch.
Also, my phone screen kinda looks like a beautiful mosaic now. It almost makes the glass shards that are poking into my thumbs as I type text messages worth it. Almost.
So the next morning (in my depressed state), I made french toast because we all know the happiness french toast can bring.
I cooked the french toast, got set up to take pictures of it because how would everyone know what I ate if I didn’t take a picture of it?! It would just be like tragic. Anyways, in an overly eager state I went to sneak a bite and while I did…I pressed down too hard on my wooden photography board that was sitting on the edge of my table…and then the board almost fell off the table…but I caught it before it flipped completely off. Phew. Or so I thought until I heard my my kinda brand new sur la table plate with the cute little dots and vintage-y off white color crash to the ground…and shatter. Crap dangit.
Can everything just like stop shattering?!
Magically, the french toast remained on my photo board, it just flipped over. What a relief…totally still fair game. So I cleaned up my beautiful broken plate, got a plastic plate out of my cabinet and saved what was left of my breakfast.
I’m not sure what in my life will shatter next, but in the meantime we should totes make French Toast Friday a thing.
And since we’re making things, things today. We should also make PBBG sandwiches a thing. Peanut Butter + Banana + Greek Yogurt. Ohhhsogood.
Coconut Cinnamon Raisin Bread French Toast
Coconut Cinnamon Raisin Bread
makes 1 loaf
1 cup oat flour
1/2 cup coconut flour
1/3 cup brown sugar, packed
2 Tbsp ground flaxseed
2 tsp baking powder
1 tsp salt
1 1/4 tsp cinnamon
1/3 cup walnuts, roughly chopped
1/4 cup raisins
2/3 cup Chobani Greek yogurt, plain
1 tsp vanilla
3 Tbsp canola oil (or coconut oil)
3/4 cup lite coconut milk
2 chia eggs (2 Tbsp chia seeds + 4 Tbsp water)
Preheat oven to 350.
Make chia eggs by mixing together 2 Tbsp chia seeds with 4 Tbsp water. Set aside and allow to thicken for 5 minutes.
In a large bowl, mix together dry ingredients.
In a separate bowl, mix together wet ingredients, including chia egg.
Pour the wet ingredients into the dry ingredients and stir until everything is combined. Scoop batter into a floured/greased loaf pan. Sprinkle a small handful of chopped walnuts on top. Bake for 50 minutes (or until loaf reaches an internal temperature of 190F). During the last 10 minutes of baking, tent the loaf with foil so the walnuts on top don’t burn. Allow the bread to cool for 10 minutes in your pan before taking the bread out of the pan to finish cooling on a cooling rack.
1/2 cup almond milk
1/4 tsp vanilla
1/4 tsp cinnamon
4 slices Coconut Cinnamon Raisin Bread (recipe above)
healthy peanut butter icing (1 Tbsp PB+2 Tbsp almond milk)
unsweetened shredded coconut
In a shallow bowl, whisk together the egg, almond milk, vanilla and cinnamon. Begin heating a skillet oven medium heat. Dunk two slices of bread into the egg mixture and allow them to sit for 1 minute before flipping to the other side for 1 minute. Place the soaked bread into the skillet and allow it to cook 3 minutes, or until the egg mixture is cooked. Flip the bread slices to the other side and cook for 2 minutes. Remove from pan and repeat with two remaining bread slices. Top your french toast with greek yogurt+honey, blueberries, healthy PB icing and coconut.
