Sweet & Sour Chicken with Coconut Brown Rice

So Monday nights I’ve been taking this exercise class where as I’m about to fall over in pain the instructor yells out something along the lines of, “…only eight more and then you’ll be Spring Break Sexy.”  I’m not exactly sure what spring break sexy entails, oooohh maybe we should urban dictionary it.  On second thought…no, that never (like ever) ends well.

So as I ponder if spring break sexy is something I should be striving for, I’m provided with just enough distraction for me to be able to survive those last eight jumping lunges.  And then I realize…there are still 39 minutes left of class. Gahhhhhhhhh.

So for the remaining 37 minutes (I used from minute 39 to minute 37 to have a pity party for myself about how I won’t survive and this is the most pain I’ve ever been in and I just want a hug but I don’t want a hug because I’m sweating and that’d be awkward and ugghhh life is just so hard)…whoa.

To avoid the shame I would have to feel if I walked out of the exercise class early, I manage to struggle through the remaining 37 minutes by thinking about food.  Glorious food.  And I think about dinner.  And what I want to make for dinner.

Last Monday all I could think about was wanting something coconuty and pineappley.  Like a pina colada.  But drinking a pina colada for dinner is frowned upon so I needed a way to make this idea seem not so very irresponsible.

So after the workout I went to the grocery store, bought pre-sliced pineapple spears, ate 4 spears on the way home, got everything in my car sticky as a result of eating those spears, got home, and then I made this dinner.

And come next Monday, I’ll do it all over again.

Sweet & Sour Chicken with Coconut Brown Rice

serves 2

Coconut Brown Rice

1 cup lite coconut milk

1/8 cup water

1/2 cup brown rice

Sweet & Sour Chicken

1 large chicken breast, chopped into large chunks and seasoned with salt/pepper

2/3 cup onion, chopped

1/2 cup red bell pepper, chopped

2/3 cup pineapple chunks, (3 pineapple skewers cut into about 18 pieces)

3 Tbsp pineapple & chili sauce (I used Thai Kitchen)

1 1/2 Tbsp olive oil, divided

Coconut Brown Rice

In a medium sauce pan, bring coconut milk and water to a boil over high heat.  Stir in brown rice.  Reduce to a simmer and cover.  Allow to simmer for 45 minutes, or until rice is cooked.

Sweet & Sour Chicken

Add 1 Tbsp olive oil to a saute pan over medium-high heat.  Add in red bell peppers and onions.  Cook, stirring frequently until soft, about 8 minutes.  Scoop softened vegetables onto a plate and set aside.

Reduce heat to medium and add 1/2 Tbsp olive oil into your saute pan.  Add in chunks of chicken and saute until cooked, about 10 minutes (flipping chicken cubes every couple minutes).  Once cooked, add softened red bell peppers and onions in with the chicken.  Stir in pineapple chunks and allow pineapple to caramelized for 3 minutes, stirring frequently.  Add in pineapple and chili sauce and stir until everything is coated and sauce is heated.  Serve chicken mixture over coconut brown rice.

    • Yes!! Pulsing lunges are such a killer!! We do this set where you do 8 on each leg(twice), then 4 on each leg (3 times), then 2 on each leg (4 times), and then 24 singles. And all the while your jumping to switch legs. Did that makes any sense? Probably not haha:) anyways, they’re killer. And I know they’re coming every time and I dread them…in a kinda I love you-I hate you way. Anyways, try this dinner! It’s great when you need something quick and simple!
