White Chocolate Almond Butter Blondies with Nutella Swirl

At least on the blog, in real life I already ate pumpkin waffles for breakfast this morning.  Complete with healthy peanut butter cheesecake frosting…I love life. 

So something that is confusing in my life lately is the realization that TJ Maxx sells food?  Really confused.   I thought they were a clothes store?!  I can’t even remember the last time I was in a TJ Maxx because I get TJ Maxx, Ross and Palais Royal all mixed up.  In my head they’re all the same place.  But if TJ Maxx is selling cream cheese extract, it most definitely just became my favorite place.  But still it’s really confusing because when someone says “I got this at TJ’s…” what does your mind tell you “TJ” stands for?

Umm yes.  Trader Joes…not TJ Maxx.  See?! Confusing.

So on Friday I drove 8 hours to Arkansas with my future family to surprise my sister-in-law-to-be on her 25th birthday.  There were scallops and cupcakes and a barre class and froyo.  In that order.  Oh, and a salad at one point that had about twenty-five kalamata olives on it.  No complaints here.  When I got that salad, Andrew got a pizza and he does this {wonderful} thing when he eats pizza where he doesn’t eat the crust.  So he eats the pizza part with toppings but he leaves behind the topping-less part.  So that’s where I come in…to eat the crust.  There are some things I am good at.  That fo sho’ is one of them.

Speaking of pizza, the place we were eating had a potato, rosemary & feta pizza.  Oh goodness…all the good things on a pizza.  I didn’t get it because I was busy eating my kalamata-covered salad but I most definitely can’t wait to recreate that.

Want to know something happy and random? I made stickers for my blog.  And I have absolutely no idea what I’m going to do with them.  But I ordered them and am superrr excited to stick them to things. 

Okay so I’ve been doing a lot of bean things lately.  I mean I like just put great northern beans in my cookie dough and now I’m making blondies with garbanzo beans.  Baking with beans is growing on me.  Especially in these where all you can taste is nutella + white chocolate.  It’s good.

White Chocolate Almond Butter Blondies with Nutella Swirl

Yield: one 8"-square dish


1 cup hazelnuts, roasted & peeled
2 Tbsp cocoa
2-3 Tbsp honey
1/4 tsp sea salt, finely ground

15-oz can garbanzo beans, drained and rinsed
1/2 cup almond butter
1/4 cup honey
2 teaspoons vanilla extract
1 teaspoon baking powder
1/4 cup white chocolate chips
1/3 cup homemade nutella (recipe above)
1/4 cup hazelnuts, roasted, peeled and roughly chopped


To the bowl of a food processor/blender, add hazelnuts, cocoa, honey and salt. Process until smooth. Mine ended up being pretty crumbly. If you're looks crumbly too, it's fine.

Preheat oven to 375F. Add drained & rinsed garbanzo beans to a food processor or blender. Pulse until beans are slightly mashed. Add in almond butter, honey, vanilla and baking powder. Process until smooth. Scoop batter into a bowl and fold in white chocolate chips. Scoop batter into a greased, 8"-square baking dish. Top with homemade nutella by swirling the nutella into the batter with a knife/spoon. Top with roasted hazelnuts. Bake for 23-25 minutes. Allow to cool. Then place in the fridge for at least 2 hours to allow the bars to firm up a little. Cut into bars and store in the fridge.

  2. H-h-hey, would ya look at that?? My mom just bought and roasted some hazelnuts! Score.
    I love buying little unnecessary snacks and non-clothing things at TJMaxx. There are some unexpected finds there! Also, make that pizza. And then I will follow suit. :)

  3. It is always a little weird to me to see the random foodstuffs next to the clearance rack at TJ Maxx. But whatever. I can’t complain! I would never have guessed there were beans in these!! Super impressed.
