Thanksgiving Leftovers Idea
Whew, editing pictures after turkey day festivities. So full.
Quick summary of my Thanksgiving: Made this savory cheddar & cranberry soda bread. Ate turkey. Ate some sweet potatoes. Ate some cranberry-cherry sauce from our neighbor. Ate some broccoli (that was paired with mayo+bacon). Ate a salad with goat cheese. Tried sweet potato pie for the first time. Ate carrot cake. Ate nutella cheesecake pudding. Ate a lot…such is Thanksgiving.
This was my last Thanksgiving before I’m married away. So I had to go big, right? right.
I feel like this is a weird day to post a recipe. The day after the food day. But for the sake of leftovers going to waste, I had to share a little something, something. If you follow me on instagram, you know that I’m a wee-bit obsessed with making tortilla quiches. They’re just so easy. And you can put anything in them. Anything. Leftover turkey, stuffing, potatoes, vegetables? Throw it in. Add an egg and some cheese and bake…easypeasy.
I mean, you could always put that leftover turkey to use on a sandwich. And oh my that aforementioned cheddar+cranberry bread makes the BEST leftover turkey sandwiches I have ever had. But if you’re not feeling a sandwich, why not make a little, cute quiche thing? That is what I would do. Well, it’s a tie. I might make some turkey nachos. Because even as I sit here (2-hours post-Thanksgiving meal), I could totally be in for some nachos right now.
When does one ever say no to nachos? Rarely.
- 1 medium (or large) whole wheat tortilla
- 1 egg
- 1 egg white
- 1/4 cup cheese, grated (I used manchego)
- 1/3 cup sweet potatoes, mashed (or greek yogurt or mashed potatoes)
- handful spinach (or whatever vegetables you have left over)
- 2 cherry tomatoes, sliced in half
- 1/3 cup black beans (or turkey or chicken or tofu)
- Preheat oven to 375F. Press tortilla into a pie dish/small ramekin/loaf pan. In a bowl, combine egg, egg white and mashed sweet potatoes until smooth. Add in cheese, tomatoes, spinach and black beans. Pour mixture into the tortilla. Bake for 20-25 minutes or until egg is set. Broil for the last 1 minute of cooking. Slice and eat.
- If you want a thicker quiche, just place your tortilla in a smaller dish before you pour in your egg mixture.
