Small-Batch Cherry Chocolate Gingerbread Cookies + a giveaway

Woohoo, another vegan cookie.  Let the dough eating commence!!!!!

 When it comes to ginger, I’m a total lightweight.  I like the stuff, but don’t really looove it.  You know those people who put a ton of pickled ginger on their sushi?  Yeah, that’s not me.  And you won’t catch me anywhere near the spicy green stuff either.

At Thanksgiving my parents had out a bowl of wasabi almonds.  Just sitting there without any warning that they where almonds covered in spiciness.  What kind of Thanksgiving welcome is that?!

But gingerbread cookies are a different story.   A happier story.  One that doesn’t burn your mouth like a pickled ginger topped sushi roll.

I usually don’t make small-batches of cookies.  Mainly because in a houseful of people who love cookies, even a dozen cookies doesn’t seem like enough.  But when it’s prime Christmas cookie making time, small-batches means greater variety.  And when there are so many possible cookie recipes to make, something has gotta give.  So smaller batches of all the cookies it is.

You know when you find a new blog and you feel like it’s Christmas morning.  You keep reading recipe after recipe and the pictures are all so pretty and you just can’t look away.  The only thing that can pry you away from your computer is going straight to your kitchen to whip up a recipe (or two, or five).  Such has been my week with all these new blogs to fall in love (and recipe lust) with.

Small-Batch Cherry Chocolate Gingerbread Cookies
  1. 1/2 cup + 2 tablespoons almond flour
  2. 1/4 cup oat flour
  3. 1 tablespoon dark brown sugar
  4. 1/4 teaspoon baking soda
  5. 1/2 teaspoon cinnamon
  6. 1/4 teaspoon ginger
  7. pinch salt
  8. 2 tablespoons applesauce
  9. 1 tablespoon molasses
  10. 2 tablespoons honey
  11. 1/4 teaspoon vanilla extract
  12. 2 teaspoon coconut oil, melted
  13. 1/4 cup dark chocolate covered dried cherries, chopped (or just use 2 tablespoons each of dried cherries and dark chocolate chips)
  1. Preheat oven to 350F. In a bowl, combine almond flour, oat flour, brown sugar, baking soda, cinnamon, ginger and salt. In a separate bowl, mix together applesauce, molasses, honey, vanilla extract and coconut oil. Pour wet ingredients into dry and combine to form a dough. Fold in chocolate covered dried cherries. Roll dough into 6 balls (dough will seem sticky). Bake for 13-15 minutes or until bottoms turn golden brown. Will seem a little undercooked when you remove them from the oven.
