It’s a gingerbread man smooshed inside my favorite Halloween candy.

I’ve become quite gingerbread obsessed.  This weekend I made fluffy, butter-filled, sugar-loaded gingerbread cookies.  They were fabulous.  I actually just crumbled one up and put it on top of some coconut greek yogurt.  {insert little instagram monkey with his hands over his mouth here} But it’s okay, I go to kickboxing every Saturday to fight the cookies.

So my life has turned into a real-life HGTV.  Well, not so much my life as my fiance’s, future-father-in-law’s and father’s lives.  Andrew and I are moving into a cute, little, 1955-built house after the wedding.  So we’re in re-modeling mode.  When I say “we’re”, I mean “they’re”.  I have done very little, except pick out some gorgeous travertine flooring and look at granite remnants to go on top of a vanity.  Travertine looove. 

And then, Andrew’s wonderful mom found us a gorgeous desk at goodwill that we’re turning into a bathroom vanity.  Again, “we’re” meaning “they’re”.  I’ve got no skills.

I’m in love with the house though.  There was a minor setback when I thought there wasn’t a frozen yogurt place nearby.  But I just googled it and there’s a Menchie’s 11 minutes away.  Phew.  Just far enough to not go all the time, but close enough to convince Andrew that the drive is worth it.

I was thinking about something.  Does everyone have a designated dessert spot in their house?  Like a specific place in the kitchen where desserts always go?  Growing up, our cookie spot was on the cutting board right next to the kitchen sink.  Not in a fancy cookie jar, but just stuffed into a Ziploc or stacked on a plate.  I’m excited to figure out where the designated cookie spot will be in the new house.  I could totally go for a cute cookie jar.  Or a Ziploc bag.  Either way I’m good.

So I thought we’d take a wee-little break from cookie making and just stick with cookie dough.  We all know that I’m having quite the affair with cookie dough.  Story of my life.

Ingredients
  1. 1 cup oat flour
  2. 1/2 teaspoon cinnamon
  3. 1/4 + 1/8 teaspoon ginger
  4. 1/8 teaspoon nutmeg
  5. 1/8 teaspoon salt
  6. 1/2 cup ripe banana, mashed
  7. 2 tablespoons peanut butter
  8. 2 tablespoon almond milk
  9. 1 scant tablespoon molasses
  10. 1 1/2 cup dark chocolate chips
Instructions
  1. First, prepare your cookie dough. In a bowl, combine oat flour, cinnamon, ginger, nutmeg and salt. In a separate bowl, combine mashed banana, peanut butter, almond milk and molasses. Pour wet ingredients into dry ingredients and stir until combined.
  2. Now melt your chocolate chips in a microwave-safe bowl by microwaving them in 30 second increments, stirring after each 30 seconds, until melted and smooth. Place 12 mini-muffin paper liners into a muffin tin. Fill the bottom of each with melted chocolate. Then roll a small ball of cookie dough and place it in the center. Cover with melted chocolate. Place in the fridge until hard.
  3. If you only make 12 chocolate cups, you will have leftover cookie dough. This is intentional. You should roll it into a ball and eat it for breakfast. Or that's what I did.

    Such a great, perfect idea! We have a designated “dessert spot” in our apartment; it’s at the end of the breakfast counter. Buuuuut I’m thinking that these Cookie Dough Cups are designated for my belly (see what I did there? :) )

  4. I just love that these have a chubbiness to them due to the ball of gingerbread-peanut butter-banana goodness inside. What I love MORE is that they won’t quite have the possible chubbiness effect on me as regular Reese’s would ;)
    I am so excited for you and your new house. Please share more details as things come along! Especially when you find out the vessel that will hold your cookies. Important.
