Let’s jump ahead a holiday.

New Years Cookies (2 of 5)

So New Years means we need to fill ourselves with some good fortune bringing foods.  And we all know that nothing quite says prosperity and progress like a pig-shaped oatmeal bar.  You know it.

The rotundness of the pig represents prosperity and success, while the way the pig eats, rooting it’s nose forward, represents progress.  Who wouldn’t like some prosperity and progress all from eating a pig-shaped oatmeal bar?!  Yay for superstition.  Or traditions.  Or whatever it is.

Let’s take a quite sec to talk about coconut oil.  I’m not really on that bandwagon.  The coconut-oil-is-the-healthiest-food-ever bandwagon.  I think more research needs to be done.  Research that will most likely prove, “everything in moderation is fine.”  I would have just used butter for these except, I’m a huge fan of the coconut oil taste.  Love what it does in these oatmeal bars.  Especially paired with the mashed banana + peanut butter.  All the tasty things, people.

If I wasn’t going to be busy on New Years Eve margarita-ing it up on my honeymoon, I would totally sit around making pig-shaped cookies for everyone wonderful in my life.  For instance, I would make a double batch for my sister who just bought me a marble pastry slab for a wedding present.  Love it.  Love her.  So much love.

But drinking far too many margaritas and searching for the perfect tacos is what will be ensuing on my New Years. ’tis the season.  Oh wait, no.  We’re done with that holiday.

New Years Cookies (4 of 5)

New Years Oatmeal Bars

Ingredients
  1. 1 1/2 cup oat flour (spooned into measuring cup so it's not packed)
  2. 1 cup oats (I used quick oats)
  3. 1/4 cup brown sugar, lightly packed
  4. 2 tablespoons ground flaxseed
  5. 1 teaspoon baking powder
  6. 1/4 teaspoon salt
  7. 1/4 teaspoon cinnamon
  8. heaping 1/3 cup dates, chopped (I used 5 pitted dates)
  9. 1 egg
  10. 1 medium banana, mashed (~heaping 1/3 cup)
  11. 2 tablespoons honey
  12. 1/4 cup coconut oil, melted
  13. 2 tablespoons peanut butter
Instructions
  1. Preheat oven to 350F. In a bowl, combine oat flour, oats, brown sugar, ground flaxseed, baking powder, salt, cinnamon and dates. In a separate bowl, combine egg, mashed banana, honey, coconut oil and peanut butter. Pour wet ingredients into dry ingredients and combine. Pour batter into a greased 5x9-in baking dish. Bake for 20-25 minutes, or until bars are set and not ooey, gooey. Cut into cute, little pigs (or could just cut into squares).
