Deconstructed Pistachio Ice Cream

Today we’re putting liqueur in our milk.

Yay for grown-up things!  Especially amaretto liqueur things.

I tend to preferred cookies/fro-yo/chocolate-anything for a dessert more so than an alcoholic beverage for a dessert.  But then I got married and my husband furnished our home with a bar cart and then I tried Disarrono for the first time and then I put Disarrono in my hot chocolate and then my stance on cookies over drinks for dessert began to waver.

The thing about amaretto liqueur is that the almond-ness of it reminds me so(!!) much of pistachio ice cream.  So naturally, when given the chance by Recipe Redux to think up an in-shell pistachio pairing idea for the Pistachio Health Institute, I knew a version of pistachio ice cream was the way to go.  So the deconstructed pistachio ice cream was dreamed up. 

I say ‘ dreamed up’ because pistachios are the things dreams are made of.  This weekend, I made this pistachio sandwich and Andrew said it was the best sandwich he had ever eaten.  Like he was still talking about the sandwich we had for lunch when we sat down for dinner.  I mean, I know cheese + nuts are good, but would have never thought to put them on a sandwich together.  Now I’m gonna be a pistachio + swiss cheese sandwich making fool.

I would also be a pistachio eating fool, but the beauty of in-shell pistachios is that I’m far less likely to eat a bazillion pistachios in one sitting.  A recent study showed that people who ate in-shell pistachios ate 41 percent fewer calories than those who consumed pistachios without shells.

Maybe it’s because I’m lazy and get tired of opening the shells.  Or maybe it’s because I see the shells from the pistachios I have eaten and they reminds me that I’ve had enough.  Regardless, I’m pro in-shell pistachios all the way just because I’m less likely to end up overeating.  Which is oh-so easy to do with delicious things.  But did you know you can eat 30 pistachios for just 100 calories? Which will be easy to do because pistachios are so cute and green (and green things are healthy, right? right.).

Now, this is a rather indulgent way to enjoy in-shell pistachios, but I’m a fan.  I took these pictures and then had this 10 minute internal debate about whether it was too early (it was 1 pm on a Sunday afternoon) to partake in the entire glass of this ice cold almond milk + Disaronno business.  I decided it was…lame.  Sometimes I am no fun.

Deconstructed Pistachio Ice Cream
  1. 1-8oz bag in-shell pistachios, roasted & salted
  2. Block of dark chocolate (I bought mine at World Market)
  3. 2 cup almond milk, original
  4. 2 ounce amaretto liqueur (I used Disaronno)
  1. Add 4-5 ice cubes to 4 small glasses. Pour a 1/2 cup almond milk and 1/2 ounce amaretto liqueur into each glass. Serve with in-shell pistachios and chunks of dark chocolate.

  1. Thank you for giving me an idea on how to actually consume the vast amounts of liqueur I have in my bar but never use (seriously, my stock is obscene)! I’ve always been a cookie/pie/cake over dessert drinks person, too, but this is just a fantastic idea.

  4. So, I never knew what DiSaronno actually was, nor did I believe that it was possible to prefer booze over cookies, but good heavens if this little nosh doesn’t seriously tempt me to put down the cookie, I don’t know what does. I really want to try this Disaronno business now!
