My Weekly Meals.
(This idea isn’t completely thought out.)
I want to start posting my weekly meals. It’s basically going to be a round-up of my instagram posts but laying out my weekly menu here lets me link to the recipes I made from other bloggers I love. So every week (or most weeks), I’m planning on posting the meals I ate from the prior week. I’ll post all the dinners I ate but then just share my favorite lunches, breakfasts, snacks & dessert.
monday: Broiled Trout + Rosemary Tomato Focaccia + Steamed Broccoli
(I just threw the chicken tortilla soup ingredients into a crockpot and let it cook for 10ish hours. Didn’t add the water or cornmeal. I did increase the chicken broth by 1 cup.)
thursday: Meatloaf Sandwiches on focaccia bread (leftovers) + salad
friday: dinner at my parents.
Open-faced Tuna Sandwiches on WW English Muffin. Recipe = packet of tuna mixed with hummus, chili powder, lime juice, black pepper. Topped with an oven roasted tomato and feta cheese. Served with a side salad.
WW English muffin with scrambled egg + egg white & cherry jelly on one side. And peanut butter and banana on the other side. (eaten separately, not as a sandwich:)).
Almond Butter Cookie Dough Balls
Recipe = 1/3 cup oats + 1/2 banana, mashed + 1 tbsp almond butter + dash cinnamon + 1-2 tbsp chocolate chips + 1 tbsp dried cherries. Mix everything together. Roll into balls and allow them to firm up in the fridge for about an hour (or overnight and then eat the next day).
Chocolate Chip Mug Cake
Recipe = 2 tbsp oat flour + 1/4 tsp cinnamon + 1/8 tsp baking powder + 1/2 ripe banana, mashed + 1 teaspoon honey + 1-2 tbsp chocolate chips. Mix all ingredients together and scoop into a greased mug. Microwave for 1 1/2 minutes. I topped mine with a little peanut butter (+ more chocolate chips).
