Weekly Meals

I’m really loving these weekly meals posts.  In a way, they’re holding me accountable and helping me remember to eat a variety throughout the week.


sunday: Cheesy Skillet Sweet Potato “Skillet Chili” via The Cozy Apron (we cut down on the cheese by not adding it into the chili, we just added some sharp cheddar to the top.  We also ended up pureeing the steamed sweet potatoes in a blender and then added them back in to thicken the chili.)

served with Maple Pumpkin Cornbread via The Nutritious Kitchen (I love pumpkin in things (especially pumpkin in breakfast bakes)…I left out the spices and greek yogurt.  Next time I’ll add them in.)

monday: BBQ salmon (sprinkled with salt/pepper and broiled for ~9 minutes, then topped with a BBQ sauce + lime juice + honey mixture and baked at 400F for 6 minutes)

served with a mango-avocado salsa (mango, avocado, cherry tomatoes, cilantro, lime juice, salt/pepper) + greek yogurt spicy chipotle sauce (I used 2% greek yogurt, added 1/4 tsp cumin and only 1 tsp sriracha) + brown rice + corn tortilla chips

 tuesday: Chicken with Cherry-Wine Pan Sauce via Iowa Girl Eats.  

Served with a salad of sorts: roasted brussels sprouts tossed with homemade cornbread croutons (leftover cornbread), toasted walnuts and goat cheese.  Drizzled in a dressing made from red wine vinegar + olive oil + dijon mustard + dried oregano + salt + pepper

 wednesday: cauliflower pizza crust filled with mozzarella + tomato sauce + basil.  Andrew couldn’t get over that it actually tasted like pizza.  I’m posting the recipe to the blog soon!

Served with a salad with avocado, grapes and more of those homemade cornbread croutons.

thursday: my stomach was hurting and I didn’t feel like cooking.  So we went out for something simple…sandwiches from Antone’s.  Turkey, Swiss & Spicy Pickles…minus the mayo, plus BBQ chips.

friday: homemade burrito bowls.  Cilantro-brown rice, red bell pepper-tomato salsa, chicken, black beans, avocados and a sprinkle of goat cheese & mozzarella cheese.

saturday: pizza from Papa Murphy’s.  We got the deLite pizza.  Half Meat and half Chicken Bacon Artichoke.  Yum.

Lunch out with my parents at Mission Burrito.  I had been wanting to try Mission Burrito for quite some time.  Unfortunately, I wasn’t that impressed.  Interesting story:  Mission Burrito lost a lawsuit with Mission Tortilla so now they’re having to change their name.

made a batch of Chocolate Chip Chickpea Cookies via Texanerin.  SO GOOD.  One day for snacks I paired them with plain FAGE greek yogurt & blueberries (…and then went back for another cookie.)

Chocolatey-Almond Breakfast Smoothie: 1 banana + 4 ice cubes + 2 teaspoons unsweetened cocoa powder + 1 tablespoon almond butter + 1 pitted date + 1-2 handfuls kale + 1 cup 2% milk

Served with 1/2 a breakfast bake.

Weekly Meals 4

Another breakfast favorite from this week was…eggs + greek yogurt with blueberries, bananas, almond butter + cinnamon raisin toast.

  8. Oh my gosh are you making the jump to Fage?! You are the most die-hard Chobani blogger I follow! Haha jk…your eats–all of them–look SO good! Turning those biscuits into croutons is GENIUS.

    • I know, right?! I still love my chobani for flavored yogurt. LOVE the coconut!!!! But for plain I really am loving Fage!!

  9. Fage is the BEST plain Greek yogurt. Love Chobani flavored but it cannot compare to Fage’s creamy thick deliciousness. I am so excited for the cauliflower pizza crust recipe! I bought a head of cauliflower specifically for the occasion!
