What I ate this week (2 of 21)

Tuesday: Leftover Tortilla Espanola from a class assignment.  Served with guacamole and ‘refried’ pinto beans topped with feta.

For the beans, just saute 2 cloves minced garlic, 1/4 cup chopped onion and 1/4 cup chopped red bell pepper in 1-2 tbsp olive oil.  Cook over medium until soft, about 5 minutes.  Add in 1 can pinto beans (rinsed & drained) and stir everything together.  Cook for ~5 minutes.  Scoop everything into a food processor and pulse until smooth.  Add salt/pepper to taste.

Wednesday: White Bass Fish Tacos.  Topped with shredded purple cabbage + corn + cilantro with a scoop of greek yogurt sauce. 

Sauce was 2/3 cup plain greek yogurt + 1 1/2 tablespoon BBQ sauce + 1 teaspoon sriracha + squeeze lime juice.

Thursday: Deep Dish Tamale.  Will be making again and writing down the recipe this time!

Saturday: Out to dinner with my sisters + mom at The Federal Grill.  Last Mother’s Day, we gave my mom the ‘gift’ of having a girls night dinner date at that restaurant.  We finally made it (a week before this years Mother’s Day)!

We started off with buttermilk biscuits.

Then got 2 appetizers to share: lump crab cake and BBQ bonemarrow.  Crab cake was to die for.  Bonemarrow was…interesting.  It was fun, but I wouldn’t order it again.

All the sides looked too good to pass up soooo…for my meal I ended up ordering two sides instead of an entree: Truffle Mac & Cheese + Crispy Brussels Sprouts.  I don’t really love truffle but I still ate it all.  And those brussels sprouts…still dreaming of them! So good!

Sunday: Cod (that fell apart in the pan) + brown rice.  Served with a strawberry & blue cheese salad drizzled in my favorite dressing.

Lunches

Simple salad with tuna + red bell peppers + purple cabbage + goat cheese.  And no salad is complete without roasted sweet potatoes!

BREAKFAST

Creamy overnight oats.  I let these oats sit for 2 nights in the fridge.  I think that (and the mashed banana) added to their creaminess!

1/2 cup old fashioned oats + 1/2 banana, mashed + 1/2 cup greek yogurt + 2/3 cup milk + scant 1 tbsp chia seeds + pinch sea salt + dash cinnamon

A rare occasion when I crave savory things for breakfast…breakfast tacos with scrambled eggs & roasted sweet potatoes.
