What I Ate This Week.

I got a couple comments saying these posts were helpful.  So I’m going to continue them.  New recipes will be posted on Mondays and Fridays.  This “What I Ate” series will be posted on Wednesday. Now that we’ve got the business stuff out of the way…on to the food stuff.

This past week was my birthday!  Which involved cream cheese frosting layered between dense, perfect hummingbird cake.  My birthday morning was spent getting in an early morning leg workout, shopping, getting my nails done, a family dinner out and then cake eating at our house.  The whole day was great.  All my family is about to head out of town (parent/little sis to Alaska; older sis to Italy) so it was great having everyone together before they leave for their adventures.


Monday: Spinach-Feta Salmon Pinwheels from HEB with roasted carrots & brussels sprouts.

Tuesday: Trader Joe’s Sun-dried Tomato Ravioli + asparagus + shredded chicken.  Tuesdays are late nights for me so Andrew and I usually throw together something simple and then eat dinner while watching an episode of Extreme Weight Loss.  I love that show.  Except it hasn’t seemed as good this season as prior seasons.

Wednesday: Red Wine Marinated Flank Steak with Cherry Tomato Caprese Salsa  via How Sweet Eats + roasted sweet potatoes.  My sister joined us for dinner this night.  I’m not the best at inviting people over…I just assume they know that they’re always welcome and they should just come over!

Thursday: Homemade Coconut Lentil Chili + cornbread muffins.  Muffins were made using my favorite cornbread recipe via Daily Garnish.  Now we’ve got a whole bunch of leftover muffins in the freezer that I can’t wait to eat with salad.

Friday: Nachos(!!) on sweet potato tortilla chips.  Toppings were roasted broccoli, tomatoes, corn, black beans and some Cabot pepper jack cheese.

Diet coke.  It’s a love-hate relationship.

Saturday: MY BIRTHDAY! We had a family dinner at Plonk! and then headed back to our house for cake.

I got the meatballs & grits.  Wasn’t feeling the grits.  I did have quite a few bites of my sister’s cheese plate which had roasted garlic, fluffy focaccia, roasted hazelnuts, baked brie and honey.  To.die.for.

After dinner we headed back to the house for dessert.  Hummingbird Cake from Take the Cake.  I LOVED this cake.  And had 2 1/2 (generous) slices.

Sunday: Sockeye Salmon Bowls with brown rice, black beans, mango salsa & homemade enchilada sauce.  Dish was inspired by Pinch of Yum.  Andrew freaked out over this dish.  He said it was one of the best things I’ve ever made.  I think he was just really hungry.

Salad with leftover flank steak from Wednesday night + roasted carrots + roasted brussels sprouts + everything bagel cheese.  Dressed with Brianna’s blush wine vinaigrette.

Quesadillas made from black beans, chicken, tomatoes, pepper jack cheese & lots of cilantro.  With sweet potato tortilla chips on the side.  I’ve been in a tortilla chips mood lately.  I can’t remember the last time we went out for some Mexican food.  Fingers crossed we’ll go this weekend.

Coconut Milk Lentil Chili + a slice of whole wheat bread with mashed avocado & extra sharp cheddar.

One of my favorite lunches was coconut rice (just 1 cup brown rice cooked in 1 can lite coconut milk + 1/4 cup water) topped with roasted chickpeas, tomatoes & brussels sprouts.

Amy’s tomato soup + open faced fried cheese toast.  My grandma always used to make us these fried cheese toasts for breakfast growing up.  And a candle for my birthday.

Cold oatmeal made with 2% milk.  Mixed with mashed banana, chia seeds, walnuts & raisins.

Milk Soaked Oats Layered Smoothie.

Kashi Crunch Cereal + frozen banana-milk-cinnamon-ice smoothie.

Overnight oats on my birthday.

Peanut butter banana waffle before my workout.  Followed by a chocolate protein shake after my workout.

Van’s Whole Grain Toaster waffle + eggs.  Served with a peach-frozen banana-milk- ice-cinnamon smoothie

For upper body I’ve been pairing this workout with cardio.

And that was my week.  It’s always hard getting back into the swing of things after a birthday that’s quite a bit on the excessive side.  I’m trying my best not to eat leftover cake from the freezer every night.  Goal for the week is to eat more green things than cream cheese frosting things:)

  1. You made me crave cornbread… Definitely will have to try out that recipe. In the middle of moving though, so half of my kitchen is packed up! Oh, and where did you the cute coffee mug with the “k” on it?

  10. Oooh, I love hummingbird cake. But I can’t believe you don’t like grits! It must’ve been a bad plate of them, at least that’s what this grits-lover is telling myself. :)

    • I was so surprised too!! I will definitely try them again (or steal a bite of someone else’s) at another restaurant!!!!

  12. Okay hold up how do you make this fried cheese toast?! Just stick cheese in a pan??

    • Yeah throw grated cheese in a pan and put a slice of bread on top. Your pan has to be super non-stick!! After the cheese is melted and crispy use a spatula to quickly (and forcefully) unstick it:)
