That recipe name.  Ridiculous.  I know.  I used all the good words.  Especially “roasted garlic.”  Holy shamoly you are the most delicious thing.

Confession.  I grew up not really loving mushrooms.  But then I worked here for a summer and the chef at the time made me a cremini + fontina stuffed crepe and from that day forth I decided that I was 100% pro-mushroom. 

Now those genius mushroom people created this magical thing called the ‘Blendability Technique,’ where you combine finely chopped & sauteed mushrooms with hamburger meat.  Hooray for semi-veggie burgers!

If there is one thing Bobby Flay has taught me about burgers, it’s that you should keep them simple.  But I do believe there is a time and a place for trashed-up-slightly-excessive-can’t-quite-fit-it-in-your-mouth burgers.  This post is about those burgers.

For me, cheese on a burger is a must.  So I decided to stuff gorgonzola in the BBQ Roasted Garlic Sauce.  Since, ya know, BBQ sauce and roasted garlic don’t have enough of a flavor explosion already. 

We all know that crunchy things go good with sauce.  Have you ever eaten chick-fila nuggets without sauce? I think not.  So the BBQ gorgonzola needed something to top so I breaded some mushrooms in panko and it had the same effect on the senses that a crunchy onion ring would.  Crispy perfection.

I feel like roasted peppers have taken over my life lately.  Roasted poblano peppers to be specific.  I’ve been buying two at the grocery store each week without even having a recipe in mind to use them in.  I just figure they make everything better.  Kind of like carbs and Ryan Gosling   And roasting peppers makes me feel all culinary savvy, which is just silly because they’re the easiest thing.

So here’s the plot…you layer the mushroom-burger patty –> crispy mushrooms –> roasted poblanos.  Then you get a spoon and add a drizzle of the BBQ roasted garlic gorgonzola sauce. 

Then you have yourself a BURGER.  And at that it’s a burger with at least 3 servings of vegetables.  Oh fiber, you are love.

If you’re a mushroom phene, you should very seriously consider submitting a recipe to The Mushroom Council’s “Swap it or Top it” Competition.   If I was to enter this competition I would make some black bean-mushroom veggie burgers. 

Except I won’t be entering because I share my camera with my dad (read: my dad let’s me use his fancy camera when he’s not traveling) and my parents are in Alaska for a couple weeks.  So no food photography for me until they get back.  This past week I’ve been making recipes like crazy trying to get ahead before they left.  So.much.food.  First up…these crispy mushroom burgers!

Portabella Mushroom Burgers with Crispy Mushrooms and BBQ Roasted Garlic Gorgonzola Sauce

Ingredients
  1. 2 cup baby portabella mushrooms, minced
  2. 1 cup baby portabella mushrooms, chopped into large pieces
  3. 1/4 cup cornstarch
  4. 1/2 cup panko (whole wheat if you can find it)
  5. 1 egg, lightly whisked
  6. 1/2 pound ground chuck (I used 80/20)
  7. 1 teaspoon worcestershire sauce
  8. scant 1/2 cup BBQ Sauce
  9. 2 tablespoons gorgonzola cheese
  10. 1 head roasted garlic (cut off the tip of the garlic head, drizzle with olive oil, wrap in foil, bake for 45 minutes at 400F)

Instructions
  1. Preheat oven to 400F. Add cornstarch to a large ziploc-type bag. In a shallow bowl, lightly whisk the egg. In a separate large ziploc bag, add panko breadcrumbs. Dump the chopped (not the minced) mushrooms into the cornstarch bag. Shake until they are coated. Then pour the mushrooms into the whisked egg and evenly coat. Put cornstach + egg coated mushroom pieces into the panko bag and shake until they are coated. Pour mushrooms out onto a baking sheet and bake for 30-35 minutes, or until panko coating is golden brown.
  2. Now heat 2 tablespoons olive oil in a saute pan over medium-high heat. Add in 2 cups of minced portabella mushrooms. Saute until soft, about 7 minutes. Remove from heat and allow to cool slightly.
  3. Now make you sauce by combining BBQ sauce, gorgonzola and roasted garlic in a food processor.
  4. In a bowl, combine softened mushrooms, hamburger meat and worcestershire sauce. Form into two patties with a depression in the center.
  5. Grill burgers until cooked through & grill the poblano pepper until the outside is charred. Peel the charred skin off of the pepper and dice. Assemble burgers: patty-crispy mushrooms-roasted poblano-BBQ roasted garlic gorgonzola sauce. Eat.
Makes 2 burgers (recipe can easily be doubled)
