What I Ate This Week.

 

Andrew was still out of town for the majority of these meals, which means I totally failed at meal planning.  It really not enjoyable to eat healthy when you don’t meal plan.  Eating becomes a stressful thing because I don’t know what I’m going to make…but maybe that’s just how my personality works.  Anyways, I did get back into the meal planning swing of things for this week (the meals in these pictures are from last week).  This seems like a quick week for us because we have family coming to stay with us Friday night and then we’re leaving for a family vacation on Saturday!! It’ll be a great break before dietetic internship things start up again.

Also, thank you, thank you to everyone who has bought the cookie book!  I wanna hug you and make you cookies.

Dinners

Monday: Vegetarian Enchiladas (recipe posted next week).  These are my favorite enchiladas right now.  I have really been craving some salsa verde enchiladas though.  Need to get on that.

What I ate 9-6

Tuesday: Trader Joe’s Sweet Potato Gnocchi + asparagus + shredded chicken.  I’ve been co-teaching a Weight Management Class on Tuesday nights this Summer.  I usually don’t get home on Tuesday’s until after 7pm, which means a quick dinner is all I want. This meal has become a Tuesday night staple.

What I ate 9-6-3

Wednesday: Leftovers from the night before…sweet potato gnocchi + asparagus + shredded chicken.

Thursday: 1/2 a Chipotle Chicken Burrito Bowl.  I drove an hour in traffic to get this bowl, which I realize was ridiculous but it was totally worth it.  I brought it home and scooped half of the bowl onto a plate and ate it with some chips.  I forget how large Chipotle’s portions are until I bring a bowl home and put it on a plate I’m used to eating off of.

Friday: Out with a friend to Soma Sushi to celebrate the Single-Serving Cookbook release.  The drink is a Red Dragon Rita…my favorite drink.  It’s spicy and ice, cold all at the same time.  So good!

Saturday: Dinner out with Andrew’s parents and my parents.  Dinner started with a salad and then I had the lobster ravioli.  Absolutely loved it.  The pasta was so thick and chewy.

Sunday: Andrew cooked salmon and I made a polenta pizza.  We also opened a bottle of wine to finish off the weekend.  And I went back for another slice of the polenta pizza (recipe will be on Healthy Aperture blog on August 15th).

 Lunches

Lunch out at Sweet Paris Creperie with a friend.  My crepe is the one on bottom.  It was called The Feast and was filled with eggs, mushrooms, tomatoes, spinach, feta, ricotta and mozzarella.  My only complaint was that the eggs were dry.  This would have been like the best meal ever had the eggs been soft and creamy.

Amy’s Low-Sodium Tomato Soup topped with Annie’s Homegrown Cheddar Squares.  Andrew and I got a little carried away with those Cheddar Squares, we went through the entire box in one day.  Whoopsidasies.

What I ate 9-6-27

Half a turkey, tomato & cheese sandwich.  Served with some pretzels and a couple more slivers of cheese.

Other 1/2 of my Chipotle Bowl from the night before.

Greek Yogurt Chicken Salad + Wheat Crackers. 

For the Chicken Salad I just mixed together 1/2 cup chopped cooked chicken, 1/2 chopped apple, 3 chopped pecans, 1 chopped green onion, ~1/3 cup plain greek yogurt, dash of dill and 1 teaspoon dijon mustard.  Made a good quick lunch!

BREAKFAST

Smoothie + small-batch oatmeal muffins.

Early morning breakfast at…Denny’s.  This was the morning Andrew got home.  His flight got in at 5 am and he wanted some pancakes.  I can’t remember ever having been to Denny’s before.  I was blown away by the amount of food you get.  I got the Whole Wheat Banana Pecan Pancake Breakfast and it came with 2 big pancakes, a huge pile of scrambled eggs and turkey bacon.  It was a lot of food.   And I ordered an iced coffee.

Banana Vanilla Protein Smoothie topped with Nature’s Path Cereal.

Anne’s Flour-Free High Protein Pancake. Topped with peanut butter and a couple banana slices.  Been eating this once a week lately! Love it!

Flaxseed & Banana Baked Oatmeal. Topped with peanut butter & bananas.

2% Plain Greek Yogurt topped with blueberries & a crumbled oatmeal muffin.

On Thursday Maggie had a puppy play date with a mini-goldendoodle.  So cute.  The picture looks find of aggressive, but they really did get along well:)

  3. Gosh all your breakfast and desserts / snacks look AMAZING!!! I have such a sweet tooth but am really lazy as well and can never be bothered making anything that you have to actually prepare in advance! I think I have used the oven about twice since I moved into my new flat 5 months ago! Looking at your delicious meals though is making doing some baking seem pretty tempting! Though if you want to fly over to New Zealand and cook for me that would be my preferred option! It all looks SOO YUM =)

  5. I totally agree it is more stressful to eat when you don’t meal plan! I end up making poor decisions that way. But it looks like you did pretty good this week!

  6. I have recently started meal planning for me and the hubs, and it really is less stressful! I agree with you-I don’t eat as well/have a harder time figuring out what to eat when I don’t have a recipe.
