Whole Wheat Lasagna Bowls with Mozzarella Greek Yogurt Sauce

It’s lasagna.  But easier.

A year and a half ago my sister brought home her new boyfriend.  He’s Italian.  Not fake Italian.  Like born and raised in Italy Italian.  Ever since then, my family has been learning how to enjoy pasta more and more.  The highlight of this pasta marathon that this last couple of years have become includes gnocchi night at Piola.  Gnocchi night is like a Disneyland for pasta eating.  Once a month at Piola, the waiters walk around with big bowls filled with different flavors of gnocchi and scoop the dumplings onto your plate.  You leave feeling rather…filled.  But it’s just one of those experiences that everyone must have.  Like making s’mores.  Everyone should make s’mores in their life.

I’ve come to realize that anything (within reason) can be enjoyed as part of a healthy lifestyle.  Gnocchi night may be an occasional (necessary) indulgence, but it isn’t how I typically enjoy pasta.  My typical pasta dishes tend to be made with whole wheat pasta and veggies.  And cheese.  Always cheese.  It’s a nice balance between creamy, cheesy indulgence and nutrient-rich veggies.

They say variety is the spice of life, which is lovely because pasta comes in a variety of shapes.  Orecchietti pasta, you just may be the cutest thing ever.  Ravioli, you are a pillow stuffed with all things perfect (aka cheese).  Lasagna, you are blankets of noodles and cheese and vegetables and meat and love.   All these sleeping metaphors, I think I’m tired.  Or maybe those are analogies.  I really have no clue.  Again I say, I am the worst at grammar.  THE WORST.

But luckily, pasta doesn’t care about my grammar.  It cares about being creamy, delicious and satisfying my hunger while being part of a healthy lifestyle.

October is my favorite month.  It was always been my favorite month.  The weather turns gorgeous.  The holiday anticipation begins.  And now I’ve learned that it’s also…NATIONAL PASTA MONTH!  During this month of pasta celebration, it’s good to know that pasta can be part of a healthy and delicious lifestyle. 

So dig into some whole grain goodness.

Whole Wheat Lasagna Bowls with Mozzarella Greek Yogurt Sauce

Mozzarella Greek Yogurt Sauce
  1. 1/2 cup plain greek yogurt
  2. 4 oz mozzarella cheese, grated
  3. 1 teaspoon oregano
  4. 1/2 teaspoon pepper
  5. 1/4 teaspoon salt
Pasta & Toppings
  1. 1 lb ground turkey
  2. 25 oz jar of pasta sauce
  3. 1 medium yellow squash, sliced and quarterer
  4. 16 oz whole wheat pasta (any shape)
  5. 1/2 cup ricotta cheese
  6. fresh basil or arugula for garnish
Instructions
  1. In a large bowl, combine all ingredients for Mozzarella Greek Yogurt Sauce. Set aside.
  2. In a skillet, brown ground turkey over medium heat. Pour in pasta sauce. Reduce the heat to low and allow to simmer while your prepare the remaining ingredients.
  3. Use a steamer basket to steam your squash until fork tender.
  4. Meanwhile, heat a large pot of water until boiling. Add in your pasta and cook according to package directions. Pour pasta into a colander to drain off water. Pour hot pasta into the bowl with your Mozzarella Greek Yogurt Sauce. Top pasta with turkey pasta sauce, ricotta, squash and an arugula or basil garnish.

  3. Gahh these photos are too gorgeous! Love how this is an easier version of “lasagna” and I have been wanting to get my hands on some ricotta cheese! Definitley will be putting this on the to-do list!

  6. Oh my gosh, gnocchi night sounds incredible! Epic, even! I’m with you on pretty much everything fitting into a healthy diet from time to time. I definitely choose whole wheat most of the time, but some occasions just call for plain old fashioned refined flour pasta. De-lish! I love the idea of these lasagna bowls. I love lasagna but can’t always be bothered to take the time to whip one up. Quick and easy but with all that lasagna love? Genius! Thanks for the recipe!
