The first recipe for this Friendsgiving is…Pumpkin Pie {Soy}Milkshakes. When I set out to make these milkshakes, I knew they had to have a crust. If you’re going to have “pie” in the title, it must have a crust. And since it’s “pie”-ish, a fluffy frosting can’t hurt either.
I’ve always seen vegan food bloggers making vegan cream cheese frosting with soy cream cheese. I was always intrigued but this was the first time I finally tried it myself. I was a fan. I want to use it to make sandwich cookies, a 4+ layered carrot cake, and an actual pumpkin pie. Ohhhh and I’m still planning on adding a spoonful of creamy soy cream cheese frosting to a warm bowl of oatmeal.
{sigh} I love the holidays.
But for now, we’ve got a milkshake that is (very nearly) healthy enough for a special breakfast and absolutely acceptable for dessert.
This may be the perfect post Turkey-day dessert because there is pie crust involved but it’s still light and refreshing. But you be the judge.

Girl, these pumpkin milkshakes look FANTASTIC! I love that graham cracker rim round the cup! I agree with you about the soy cream cheese. I’ve never had it before, but it’s awesome!
