Roasted Ambrosia Apple Breakfast Bowls

Sometimes life needs something other than a bowl of oatmeal for breakfast.

Roasted Apple Breakfast Bowls

Sometimes life needs you to turn apples into bowls and stuff them with oatmeal. 

Then you roast the whole thing until it’s perfectly sweet. 

Then you put the roasted apple bowl on some yogurt and call the whole thing breakfast. 

And you may just make 4 of these breakfast bowls at once and keep them in the fridge for your breakfasts.  That way, every day (for 4 days) when you wake up you have a bowl filled of sweet, tart, creamy, crunchy things waiting for you in the fridge.

Now of course there had to be an oat crumble because oat crumbles are one of my favorite things.  Along with puppies, Christmas trees, and southern California beaches.

These apples are making me feel festive, which is good because it’s December 4th and while we have our Christmas tree up, we don’t have any Christmas lights hung outside.  My 8 year old self is super disappointed in my 24 year old self.

So it’s fortunate that roasted apples practically scream “IT’S THE HOLIDAYS!!”.  Or maybe that’s me screaming about the holidays.  I just wanna roll around in all the holiday-ness and make a snowangel in it.  But it’s hard to do that when your husband unplugs that Christmas tree lights at 9pm because he’s scared you’ll forget to do it and the Christmas tree (and subsequently the house) will go up in flames.  If we can’t have a lit Christmas tree at all hours of the day, at least we can have roasted apples.  

These apples aren’t just any apple, they’re Ambrosia Apples.  Which means they have a slight honey flavor and are one of the sweetest apples you can buy at your grocery store.  And in my opinion (which you can take with a grain of salt) they are MADE to me baked.  They come out even sweeter, which might make your mind say, “Why am I eating cobbler for breakfast?” But you’re not. You’re just eating a delicious Ambrosia Apple stuffed with an oat crumble.  And it’s pretty much the thing of dreams.  Yeah, pretty much.

  1. I love love love Ambrosia apples! Theyre some of my apple favorites. Oh to have woken up to one of these for breakfast!
