Sweet Potato Crust Quiche
so. quiche-ing. good
Andrew told me not to tell anyone this but…I am SO excited for The Bachelor. Like SO SO SO. I’ve never felt excited about it before, but this season I’m fah-reaking out over. I think Chris is the sweetest and I think none of the girls they pick to put on that show will actually want to live on a farm and be a farmer’s wife but I don’t care. I’m gonna watch every episode.
Can that be a New Years resolution? Yes, I resolve to watch more trashy, reality television.
Other than trashy television, for Christmas my sister gave me a milk frother and I’m frothing everything. And over frothing everything because I get a wee-bit carried away and turn my entire drink into foam. And then I eat my hot chocolate foam with a spoon. And then I start another sentence with ‘and’. It happens.
I made this quiche a couple weeks ago as a healthy lunch to have around during the holidays. I ended up liking it so much that I recreated it to share.

This looks sooo good! I will definitely make it. However, I don’t use the microwave. I will figure out how to make it without the microwave so it is more healthy … for me! Might even try regular potatoes instead of sweet potatoes. Thanks for sharing!

I’d recommend just baking the shredded sweet potatoes at 350F for 20 minutes instead of microwaving!:)

Totally genius – also froth is fabulous and should be incorporated into every hot drink.
I’ve never been able to get into The Bachelor or shows like that. Maybe it’s the idea that I’ll be hooked if I start haha. This looks incredible. I’ve made sweet potato crust before but never with a quiche. Obsessing over that idea.
