One-Pot Chicken & Gnocchi Soup...the perfect (EASY) dinner!

I’ve been wanting to make some one-pot recipes for the blog because (1) it’s easy for you and (2) it’s umm…easy for me.  One-pot dinners = less dishes to do (especially if it’s a Thursday thru Sunday night when I just can’t even think about cleaning the dishes in the sink). 

Related to cleaning…I need to get more organized.  I spent 20 minutes searching the house for this recipe.  It was written on a random page in one of the many notebooks I have laying around.  Some recipes I type into my phone and some I scribble down on a piece of paper/napkin/used envelope.  It’d be super nice if I’d immediately type the recipe into a Word document as soon as I finished making it…but let’s not kid…that’s not gonna happen.

So this weekend we started the wedding dress search for my big sister.  She’s getting married in September (AHHH!).

I love wedding dress shopping…as long as it’s not for mine.  I was a stressed out mess trying to pick out my wedding dress, but my sister had it more together and wasn’t an emotional mess….which made the day more enjoyable for all. 

Afterwards we did lunch at Adair Kitchen.  I’m in love with their brunch.  I got the sourdough toast topped with avocado + chorizo + olive oil.  It was served alongside mashed black beans, which were so good.  They may have had lard.  I don’t know.  But I went ahead and recreated the recipe for the blog (lard-free) because I just loved them so very much.  And sourdough toast just always does it for me because sourdough reminds me of California and I love California.  And we have a trip planned there in 48 days.  I think I’m gonna make one of those construction paper ring chains that you made in kindergarten to countdown to things.  You made those, right?

Back to Saturday…that day I had two brunches because that morning Andrew and I met some friends for a double date brunch at Sweet Paris

I used to not be the biggest fan of brunch.  Which I’m glad I got over because it’s like one of the happiest things.  I mean, a day filled with crepes + nutella and avocado toast…it’s the day of my dreams.

You guys.  If you need a dinner that doesn’t take much thought, this is it.  It just comes as a bonus that it only uses one pot.  Okay…that’s a lie.  It uses one pot, a cutting board, a spoon of some sort, some measuring cups and a knife. 

Just the easiest peasiest recipe for you.

  2. Brunch is the BEST. And this looks pretty darn delicious too! I’m considering making it tonight… do you think I could sub almond milk for the regular milk in the recipe?

  4. Hi, I’ve been following you on Instagram. I call these recipes “One-Pan Wonders” in my kitchen, yum yum, looks good for a quick soup. But I have one question. I’ve come across several recipes recently that call for low or reduced sodium chicken broth – then lower down the ingredient list is the addition of salt. Why? Sort of defeats the purpose doesn’t it?

    • I see your point…but I think using a low sodium broth let’s you control the salt better. If you start out with a higher sodium broth you can’t remove the salt if it’s too salty at the end. Or that’s how I feel lol;)
