Baked Ricotta with Dark Chocolate Sweet Potato Chips

If you notice that the blog got a facelift…that means I love you.  Because that means you’ve been reading this blog long enough to know what it used to look like.  Some of you have been here since the early days (3 1/2 years ago) and I am so grateful to get to write these posts and so grateful that you come back to read them.  I love you for making my life feel full. 

I wish I could hug you.  And deliver homemade baked goods to your doorstep.  And bring you you iced coffee from your favorite coffee shop.  Just know I adore you for coming back week after week to see little glimpses of what the inside of my head looks like.

For the redesign I worked with Lindsay at Purr Designs and I can not say enough good things about her.  She took a cluttered Pinterest mood board and turned it into a blog design that I’m in love with.  And a recipe page that is actually functional (FINALLY!!!!).

If you are in need of a blog redesign, she’s your girl.

I had every intention of celebrating the blog redesign with a ridiculous cake.  But chocolate and cheese will do.  I’ve always been a lover of the chocolate + cheese combo.  My go-to after-school snack in high school was a trail mix of sorts made with chocolate chips + string cheese + umm…goldfish.  This is a slightly classier version of that combo.

And it comes at a perfect time because the Superbowl is upon us and you need dip.  And life needs chocolate.

I mean.  This dip has everything.  Sweet, salty, creamy.

I made these sweet potato chips drenched in chocolate awhile ago.  My plan was to use them to top cupcakes.  But that didn’t go as planned (aka we ate them all before I got the chance to bake the cupcakes).

I still want to top cupcakes with these.  Or maybe make a sweet potato muffin topped with chocolate frosting topped with crushed sweet potato chips.  I think I should move boldly in the direction of that dream of a treat.

But for now, we have cheesy dip with crunchy chocolate covered chips.  If you’re looking for people to say things like, “whoa, that’s weird”…make this dip. 

You take a chip, dip it into the hot dip, and you try to eat the whole thing before the chocolate melts.  It’s like my definition of fun.

If you wanna drink this with wine…that is fine.

Baked Ricotta with Dark Chocolate Covered Sweet Potato Chips

Yield: 3 cups baked ricotta dip

Prep Time: 20

Cook Time: 25

Total Time: 45

Ingredients:

15 oz whole milk ricotta

4 oz sharp cheddar, grated

4 oz cream cheese

1 cup dark chocolate chips

4 oz Sweet Potato Chips (I used Terra's Sea Salt Chips)

Directions:

1. Melt chocolate chips until smooth (I used the microwave; heating in 30 second increments).

2. Dip sweet potato chips into the melted dark chocolate and place on wax paper to allow the chocolate to harden.

3. Preheat oven to 350ºF.

4. In a bowl, combine cheeses.  Grease an oval baking dish with olive oil and scoop in cheese.  Bake for 25 minutes.  During the last 5 minutes of baking, turn on your broiler and place the cheese dip directly under your broiler until the top is turning golden brown.

5. Serve warm with chocolate covered sweet potato chips on the side.

P.S.
