Avocado + Chicken Sausage Toast with Healthy “Refried” Black Beans

So there’s this place where I first had this meal

Avocado+Chicken Sausage Toast!! Served with healthy "Refried" Black Beans!!

It’s their avocado+chorizo toast.  And that meal made me want to make this meal.

Now I’m still not quite sure how they get their black beans SOO black, but this black bean recipe will do for now.

Also, I kinda want to make it a goal to eat my way through their breakfast menu.  Who’s with me?

So I’ve been thinking. 

And I think Texas should have at least one snow day each year.  Growing up I only remember ONE ice day that school got cancelled for.  ONE.  That’s so lame.

So I propose that once a year Houston gets to have a snow day where everyone is encouraged to sit inside and drink hot chocolate under a mountain of blankets.  That’s public policy I could actually get behind.

I’m currently in a black bean obsessed state.  I want them ALL the time.  This week I’ve had them in my lunches, I made them creamy and fluffy for this recipe and then we had them in this dinner.  All the beans (…and all the oligosaccharides that go along with them (for all my RD friends;))).  

I think many of us live in an avocado toast obsessed world.  I do.  But I rarely make avocado toast.  I don’t know why.  I think it’s because I have a propensity for letting my avocados go bad.  It’s the worst.  And every time it happens I’m sad about it.

But today the avocados didn’t go bad and avocado toast was successfully made.   And you should make it too…just like this.

Avocado+Chicken Sausage Toast with Healthy "Refried" Black Beans

Yield: serves 2-3

Prep Time: 10

Cook Time: 10

Total Time: 20


1 avocado

squeeze lemon juice


15 cherry tomatoes, sliced in half

2 tablespoons olive oil

1/2 onion, chopped

2 garlic cloves, minced

1 (15-oz) no-sodium black beans, rinsed and well-drained

1/2 teaspoon cumin

2 chicken sausages, cooked & sliced

2 whole wheat English muffins (or whatever bread you've got), toasted

Garnish: sharp white cheddar, grated


  1. In a bowl, use a fork to mash together avocado, lemon juice and salt/pepper.  Set aside.
  2. Toss tomatoes with a little olive oil (1/2 tablespoon) and put them under your broiler until turning brown and caramelized.
  3. In a skillet, heat 1 1/2 tablespoons olive oil over medium heat.  Once hot, add in onion and cook until soft, about 7 minutes.  Add in garlic and cook until fragrant, 30 seconds.  Stir in black beans, cumin and salt/pepper.  Pour black bean mix into a food processor and blend until smooth.
  4. Top English muffins with mashed avocado mix, broiled tomatoes and chicken sausage.  Serve with "refried" black beans garnished with grated cheddar.

    Need to make this for brunch soon.. love everything about it! Chicken sausage, black beans, and avocado! I appreciate the oligosaccharides comment :) I too have a tendency for letting avocados go don’t feel so bad!

    Haha! Boston University has had FOUR snow days this semester. Four. We haven’t had a full week of school yet.
    But anyway, who’s complaining? I just wish I could have avocado toast and these beans now!
