No-bake Dirt Cake with 100% Welch’s Grape Juice Chia Pudding

The prerequisite for a Valentine’s dessert is…chocolate. And chocolate we’ve got.

Do you remember dirt cake with gummy worms? I always remember eating it at childhood birthday parties. It was one of my absolute favorite things. Well this dessert reminds me of just that…dirt cake, but with a healthier spin.

Specifically, a Concord grape-y spin.

This dessert is bursting full of Welch’s 100% Grape Juice.  And that’s good news because Welch’s 100% Grape Juice has polyphenols, a plant nutrient that may help promote heart health. The darker the purple the fruit or vegetable is, the more polyphenols you are likely to find.

So what you should gather from that paragraph is YAY polyphenols and YAY 100% grape juice made with Concord grapes.

We’ve all heard of the heart healthy benefits that foods like salmon and oatmeal may provide, but do you think to reach for 100% grape juice when choosing foods that may support a healthy heart? I know. It’s a game changer.

So you start with an uber chocolaty layer that tastes like Oreo crumbles.  Then you top the whole thing with cool, refreshing chia pudding.  Then you put some blueberries in a saucepan and cook them until they’re reduced down and your mind says, “WE’RE MAKING COBBLER!!!” You can make cobbler another time. Right now we’re making the dirt cake of your dreams.

Finally pour the reduced blueberries over the top and let the flavors meld together (for 5 minutes or 2 days) and hooray you’ve got a healthier dirt cake.

No-bake Dirt Cake with 100% Welch’s Grape Juice Chia Pudding

Yield: 6

Prep Time: 15

Cook Time: 6

Total Time: 3 hours 30 minutes (3+ hours of this is just letting the pudding set)

Ingredients:

Dirt Cake Layer

15 graham cracker sleeves (30 crackers)

6 tablespoons dark cocoa powder, unsweetened

5 tablespoons maple syrup

1 tablespoon water

scant 1/2 teaspoon salt

Chia Pudding

1 1/2 cup 0% greek yogurt, plain

1 cup Welch's 100% Grape Juice

1/3 cup chia seeds

Blueberry Sauce

2/3 cup blueberries

2 tablespoons Welch's 100% Grape Juice

1 tablespoon maple syrup

Directions:

  1. First make your dirt cake layer.  In a food processor, combine graham crackers, cocoa powder, maple syrup, water and salt until a sand-like consistency forms.  Dump 'dirt' into a skillet and press into a flat layer.  Set aside.
  2. Now make your chia pudding.  In a bowl, combine greek yogurt, Welch's 100% Grape Juice and chia seeds.  Pour chia pudding over the dirt cake layer.
  3. Cover and refrigerate for 3 hours (or overnight) to allow chia seed pudding to thicken.
  4. Now make your blueberry sauce.  In a saucepan over medium heat, combine blueberries, Welch's 100% Grape Juice and maple syrup.  Heat, stirring frequently, until blueberries are cooked down, about 6 minutes.
  5. Top dirt cake with reduced blueberry sauce.  Serve immediately.  Store leftovers in the fridge.

    What kind of cookies/crackers are graham crackers exactly, by the way? I can’t get them here so I have to look for a suitable substitute…
