Iced Mocha Chia

It’s an ice cold chocolate milk with more caffeine.

Since I’ve been SOO into iced coffee lately, I thought it’d be good to switch things up so the morning doesn’t come when I’m bored out of my mind with my iced coffee breakfast routine.  And this is a nice way to incorporate chocolate into your morning, which is always a happy thought to wake up to.

I should give you the disclaimer that I know nothing about coffee.  Every time I post a coffee containing recipe my mind is all like, “I have not idea what I’m doing hehehe.”

Because I seriously just brewed my first pot of coffee about 4 months ago.  Now I’m in this phase of my life where I’m slowly learning all the deeelicious things you can do with coffee…like add chocolate.

Okay it’s not like sweet chocolate.  It’s unsweetened cocoa which means this recipe is not very sweet, except from the sweetness that comes from the vanilla almondmilk.  I’d say it’s the perfect sweetness level for the morning, but maybe you feel differently? And maybe sometimes I feel differently, like this morning when I put some chopped up Easter chocolate on top of my oatmeal.  Try the drink and let me know your thoughts.

In other news that you don’t need to know, I’ve been in a major dinner planning rut.  This week while meal planning I had Andrew look through my Pinterest “dinner” board and pick out something that looked good.  He picked this.  But then we ended up making a non-skillet, non-besciamella version for his lunches for the week.  So I have no idea what we’re gonna eat for dinners.  Someone bring us food.

Back to this drink.  It’s mega simple and a nice change from your morning iced coffee.  If you want to make it even simpler, just replace the cocoa powder & vanilla almondmilk with chocolate almondmilk.

Ohh and if you wanna leave the chia seeds out and just make this an iced mocha…that is fine too.

Iced Mocha Chia

A chocolaty twist on iced coffee.

Yield: serves 4

Prep Time: 3 minutes

Cook Time: coffee cooled overnight

Total Time: 3 minutes (if coffee is cooled)

Ingredients:

2 cups coffee, cooled in the fridge overnight

2 cups vanilla almondmilk

2 tablespoons chia seeds

2 tablespoons unsweetened, dark cocoa powder

1/2 teaspoons cinnamon

Directions:

Combine all ingredients in a blender and blend.  Pour over ice cubes and serve!

For an even simpler recipe, replace the cocoa and vanilla almondmilk with chocolate almondmilk.  (p.s. if you're not a chia seed fan, feel free to leave them out!)

  5. I have been SO into iced coffee lately. Since the awful winter we had, every day that it’s 70 degrees I’m like “it would be the perfect day for an iced coffee.” Cannot wait to make this.

  6. I hear ya on getting in a dinner rut… Here are a few recipes my husband and I really like and that are easy for leftover lunches

http://www.foodfaithfitness.com/zucchini-lasagna-pizza-style/   this is one of my fav’s. I substitute cottage cheese for the ricotta. Oh, and make sure to let it cool or else it’s soupy!

http://paleomg.com/spaghetti-squash-crusted-quiche/   I know this is weird, but I really liked eating this cold as a snack…

Oh! and I’m glad to see you’re a pinch of yum fan too!
