So I didn’t post Friday.  Did you notice?

I got to Thursday night and was like, “crap, I don’t have a recipe for tomorrow.”  I’m very impulsive with everything I do.  I want to make the recipe NOW then edit the photos NOW then post the post NOW and I don’t want to sit around and think or plan or have proper grammar.  I just want to do it NOW.  All that to say I don’t excel at pre-planning posts.

I remember when I started reading about starting a blog (howyadoin 2011?) and people would say you have to have an inventory of 10+ blog posts before you start your blog.  If that was the case, I would have still never started a blog.  All the recipes I post are made at most 5 days before I post them and I never have more than 3 recipes made and ready to blog about at one time.  Typically I make 3 recipes Sunday and those are the recipes for Monday, Wednesday and Friday.  It works.  Except when it doesn’t, like last week.

So today’s recipe involves oatmeal.

New oatmeal recipes never get old to me.  I’ve been kinda over bananas for the last two days, which really blows my mind.  But it’s good because that means I actually make an oatmeal recipe that doesn’t involve bananas.  Instead it involves caramelized apples and coffee.

Oh coffee and oatmeal.  One time I made a green tea latte oatmeal.  I think that was the beginning me falling in love with coffee & oatmeal.  I just asked Andrew when was the first time he remembers falling in love with something.  He said it was his RC car when he was 11 years old.  He said he would lay in bed at night and stare at it and think, “I can’t believe I got it.”  Gah that’s so cute. 

I think the first thing I remember falling in love with was going to get donuts with my mom before elementary school in the morning and then listening to NPR as we drove to school.  And then I’d break down crying as soon as we got there and she’d have to give me her necklace to wear so I could make it through the day.

Moving on.  Maybe someone can clue me in on what the hella is Cochella.  According to instagram it’s an excuse to wear clothes with a lot of cutouts and say things like #chella and wear a lot of supa cute headbands like these.  Now I know it’s a music festival, but there was a brief moment when I thought it might be a film festival.

I never used to say bad words, for instance the word ‘hella’.  But then Andrew rubbed off on me.  I told Andrew this and he says it wasn’t him.  He says it’s just now I work in the real world and sometimes those words just fit the situation.  Truth.

The snap dragons in the picture are the last of the alive snap dragons in our front yard.  Right now our entire yard just looks fuzzy.  Fuzzy with weeds.  And ivy vines are slowly climbing the brick and taking over the entire front of the house, which I LOVE.  A house covered in vines.  That’s what I wanted as a kid and now BOOM.  Dream do come true.

Right now as I’m typing this up it’s hailing outside, which is quite the bummer because we had a froyo date planned.  I’m thinking it’s going to have to be postponed.  And also of concern is all the 100ft pine trees around us that are swaying a little too much in the wind.

But let’s focus on the task at hand.  Which is you making this latte + caramelized apple + snickerdoodle oatmeal.

Latte Apple Crisp Oatmeal

The least boring bowl of oatmeal.

Yield: serves 1

Prep Time: 3

Cook Time: 17

Total Time: 20 minutes

Ingredients:

1/2 of a Lady Alice apple, cut into thin wedges

1 tablespoon butter

1/2 cup coffee

1/2 cup 2% milk

1/2 cup old-fashioned oats

2 tablespoons Annie's snickerdoodle cookies, crumbled

 

Directions:

Heat a saucepan over medium-low heat with butter.  Add in apples and cook for 5 minutes.  Add 2 tablespoons water and partially cover pan for 3 minutes to allow apples to steam and soften.  Flip apples to the other side and cook until they are golden brown and caramelized, about 5 more minutes.

In a saucepan over medium heat, bring your milk and coffee to a low boil and add in oatmeal.  Reduce heat and cook oatmeal, stirring frequently until creamy.  Pour oatmeal into a bowl and top with caramelized apples and crumbled snickerdoodle cookies.

  1. I think it’s totally acceptable to use those words especially when it rhymes so well.. hella & coachella. Made me smile.

    Kylie, you had me at oatmeal. This will be my breakfast as soon as I get ahold of those snickerdoodle cookies! P.S. You may still have bananas on the brain because in the recipe it says top with caramelized BANANAS and not apples. Just FYI. :)

  2. Yes, yes I DID notice you didn’t post on Friday…and my Friday morning was all kinds of shambly…on another note, I did some archive searching instead and found out you have Raynaud’s too!!…we’re practically the same person…minus the fact that you’re funny and have a blog and I don’t!

  3. Today, I’m wearing my “c” charm, and my St. Francis charm. You can wear the “K” charm, and pearl I got you in Portland. It’ll be like the old days. How did I think of that stuff? And by the way, I thought you were upset because I made you listen to NPR.

    • Will do with the charm…I have school today lol. I think I did hate npr at the time bc if it was on it meant we were likely heading to school, but now I love it for the memories.

  4. I did notice you were gone on Friday. I was so confused! :) And I am so sick of hearing about Coachella. It is the thing to do down here since it is relatively close to where I live. Thank god its over!
