Banana Bread Protein Waffles

I’ve made these waffles 3 times in the last 2 weeks and thought it was time to share. They can be a little temperamental because occationally the top half of the waffle will separate from the bottom half of the waffle when you open your waffle maker up. But if you grease your waffle maker REALLY well and make sure to let the waffles cook slowly, you should have no problems.
And problems are the last thing I want you to have when you’re making these for brunch or for your mom on Mother’s Day.
So I’ve been really into that Budapest song lately. Andrew has been too. When I want something, I’ve been putting that song on in the background and then going and asking him. I’ve tried it twice…but it only worked once. The time it didn’t work we ended up having to have a serious discussion about how this is not the right time to get another dog. Boo.
While I was working on this post I had some random Budapest YouTube playlist playing and this ad came on about this girl who couldn’t go to college because she had to go to work to support her family but them Strayer University decided they were gonna pay for her entire college career and I’m sitting there just balling at the entire thing. Gah I’m turning into my big sister. She cries at everything. Like any Gerber commercial ever. Or really any baby ever.
Moving on to the toppings. Oh yes pulease.
I took all the fruit out of my refrigerator and put it on top of these. If you wanna keep it classic with just butter & maple syrup, that’s fine. But maple syrup doesn’t look as pretty as strawberries/peaches/bananas/raspberries/blackberries in pictures, ya know?
Lately I’ve been taking my food photos in my living room since it’s the room that gets the best light. Photos in the living room means anything I make or am making has to be transported from the kitchen to the living room. I realized today that every single part of a waffle maker gets really hot. Never try to move a hot one. Don’t do it. Your fingers will get too toasty warm.
I hope you make these for someone and then they make waffles for someone else. And it turns into a giant “pay it forward” type of deal like when you pay for the car in front of yours coffee in the Starbucks drive-thru. But it’s even better…cause it’s waffles.
Banana Bread Protein Waffles
The perfect way to add more waffles to your life.
Yield: serves 2 (makes 2 waffles)

1/2 cup oat flour
1/4 cup vanilla protein powder
1/4 cup coconut flour
1/4 teaspoon cinnamon
1/8 teaspoon salt
1/2 cup + 2 tablespoons milk
1/2 cup mashed bananas (~2 small bananas or 1 large banana)
1/2 teaspoon vanilla
Topping: Coconut Noosa Yoghurt & strawberries/peaches/blackberries/raspberries/bananans
Preheat waffle maker to a medium setting (mine has 1-6 heat settings...I put it on 3).
In a bowl, combine flour, protein powder, coconut flour, cinnamon and salt (all flour should be spooned into the measuring cup and leveled off...not packed into the measuring cup). Add in milk, mashed bananas and vanilla. Stir just until a batter forms.
Grease the waffle maker REALLY well with non-stick spray. These waffles like to stick so grease it REALLY well. Seriously. Cook the waffles on medium heat until cooked. Top with fruit and Coconut Noosa Yoghurt.
If you open the waffle maker and the top layer pulls apart from the bottom layer, no fear. Just gently use a knife to release the top layer from the waffle maker and put it back onto the bottom of your waffle. It still tastes the same. Next time just put the waffle maker on a lower heat setting and cook the waffle slower and longer.
