Pancake Mix Cinnamon Rolls

Growing up she taught me this way to make cinnamon rolls FAST.  We used to make them in our toaster oven and they would stay so gooey.  Or maybe that’s just because I ate 2 cinnamon rolls worth of raw dough before I put them in to bake.  I mean, the end pieces of the cinnamon roll were never made to be baked.  They’re too uneven, ya know? I don’t know where I got my love of raw cookie/pancake dough from.  It wasn’t my mom.  I think it was my grandma.  My mom’s mom.  The one who used to feed me sugar cookie dough when I was sick.  The best.

So I shared the pancake mix cinnamon roll idea on instagram awhile back and people seemed interested.  So here we are with the recipe to share.

First you pick your favorite pancake mix.  Any will do.  I’ve used Kodiak Cakes Mix & Bob’s Red Mill Buttermilk Mix.  But don’t feel the need to limit yourself to those two.  Go crazy and get creative.  Like try some blueberry whole wheat mix or something else unique.

Now add a bit of milk to the pancake mix until a batter forms.  Roll out and top with butter, sugar and cinnamon.  Then roll up and bake. 

Easy. 

If you want to sub in banana for the sugar or nut butter for the butter…that could be fun. Let me know how it goes.

Pancake Mix Cinnamon Rolls

The easiest cinnamon rolls of your life.

Yield: makes 6 small cinnamon rolls (could probably feed 1.25 people) ;)

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Ingredients:

1 cup pancake mix of choice (spooned into measuring cup; I used Bob's Red Mill Buttermilk Pancake Mix)

1/4 cup Almond Breeze Almondmilk Hint of Honey Vanilla

1 1/2 tablespoons butter, chopped into smaller cubes

2 tablespoon brown sugar

1/2 tablespoon cinnamon

Directions:

Preheat oven to 350ºF.  In a bowl, combine pancake mix and Almond Breeze Almondmilk Hint of Honey Vanilla until a dough forms.  If the dough is dry, add 1/2 to 1 tablespoon additional almondmilk.  Dump dough out onto a floured surface.  Roll it into a long rectangle and top with butter, sugar and cinnamon.  Roll up and slice into 6 cinnamon rolls.  Place in a greased baking dish and bake for 8-10 minutes (don't over bake).  They should look underbaked when removed from the oven.  If overbaked they will taste VERY dry.  Top with frosting/yogurt of choice or just eat plain.

  4. Sorry, but cannot recommend this recipe at all. Am glad the author has great memories with her Mom, but this was totally inedible. I am a very experienced cook, did not expect this to approach a traditional roll in any way, but was hoping for a weekday quickie. Absolute waste of ingredients, not even dog or birds will eat it. I NEVER waste food, but this is going in the trash.

  6. I found this recipe to be fairly simple but it lacked the chewiness and moistness that i expect from a cinnamon roll. It was a bit dry and crumbly. It tastes very much like a drier pancake with cinnamon and sugar. If i make this recipe again i will mix the butter, cinnamon and sugar to spread on the dough.

  9. Just made these, In my opinion use less milk and more pancake mix to achieve a more consistent batter, when the batter is not sticking to anything besides itself that is ideal. I probably used around 2 cups pancake mix in total (including during flattening) to 1/4 cup milk. I also added a dash of cocoa to the batter, used less sugar, more cinnamon, and more butter and to keep moist during baking a put a pat of butter on top of each roll as well as adding a dash of cinnamon. If you like them gooey i would keep the 10 minute time but could bake as long as 12-15 minutes based on your preferences.

    • I tried this with the Trader Joe’s Ube mochi pancake mix (1 cup) and 1/4 cup + 1 tbsp of whole milk. The dough was a little sandy at first but that’s to be expected because it’s a gluten free mix, I used all purpose flour to roll it out and that helped a bit. I was more generous with the  butter and sugar Using 2/3 tbsps of each and about a tbsp of cinnamon And I baked it in a muffin pan so they were separate. I read all the mixed reviews so I didn’t know what to expect but 13 minutes in my toaster oven at 350’ was perfectly cooked and we really liked them! The texture is toasted on the tops while being more chewy at the bottom and so sweet and gooey! It’s not a traditional “Cinnabun” but it’s a good twist on a cinnamon bun??

  11. just made these for “brinner” with bacon and eggs and they turned out great, don’t know what the others are talking about :) I put plenty of all three ingredients and made sure the dough was really fluffy, baked for right at 10 minutes. When they came out I drizzled maple syrup over top and I think that really helped keep them moist and soft. YUM. Thanks for the recipe! This will definitely be a go-to.

  13. Yaaass girl! Having one of those ‘what can i make with what i have’ kinda days and found this recipe.  The small batch is perfect for trying a new recipe without the fear of wasting ingredients if it doesnt turn out. Not only is this great as it is, but it makes a crazy good, super simple base for SO MANY variations!  I found a Granny Smith and a Navel begging for attention while gathering my ingredients and decided to incorporate those as well. I sliced the apple super thin so it would bend and zested the orange. I had butter already softened on the counter, so I spread that over the dough instead of cubing it and place the apples and orange zest where the nuts I didnt own would have gone. Not wanting to waste the orange, I juiced half of it into my measuring cup and added milk to achieve the 1/4 C. needed. I baked them in a spring-form pan and drizzled a simple glaze of butter, conf. sugar, milk, and vanilla over top and BOOM. Smiling faces all around. Thanks so much for sharing this Kylie!   17. these are really good :) i just made them for me and my brothers. i ended up needing more than 1/4 cup of milk, but that might be because i used whole wheat pancake mix. i’ll definitely make them again sometime!

  18. I made a pumpkin version of these and they were tiny spirals of delicous. 
    I used a cup of pancake mix with 1tbsp of pumpkin spice coffee creamer and 3-4 tbsp of almond milk. I rolled it thick between floured parchment paper and spread a pumpkin, sugar and cinnamon mix on the dough. 

    Cooked these in a cast iron pan with plenty of butter in the bottom, added some butter on top with cinnamon and baked for the recommended time and temp. 

    We ate them warm with powdered sugar on top. I would def recommend. 

  19. Christmas memories.  Before we open presents I get the roller cinnamon rolls in the oven so they will be ready.  My daughter just diagnosed with celiac   Making things quite difficult.  

    I can’t wait to try these.   I’m not a baker anymore fingers crossed

  22. Very delicious and easy recipe!! I would recommend adding butter to the batter along with the pancake mix and milk for a thicker and more doughy result. Also, dipping the dough in melted butter and a cinnamon/sugar mixture before putting it in the pan will ensure a much softer and decadent pastry while it bakes!! 

    It also helps to add a glaze- I use powdered sugar, milk, butter and vanilla.
