Pancake Mix Cinnamon Rolls

Growing up she taught me this way to make cinnamon rolls FAST.  We used to make them in our toaster oven and they would stay so gooey.  Or maybe that’s just because I ate 2 cinnamon rolls worth of raw dough before I put them in to bake.  I mean, the end pieces of the cinnamon roll were never made to be baked.  They’re too uneven, ya know? I don’t know where I got my love of raw cookie/pancake dough from.  It wasn’t my mom.  I think it was my grandma.  My mom’s mom.  The one who used to feed me sugar cookie dough when I was sick.  The best.

So I shared the pancake mix cinnamon roll idea on instagram awhile back and people seemed interested.  So here we are with the recipe to share.

First you pick your favorite pancake mix.  Any will do.  I’ve used Kodiak Cakes Mix & Bob’s Red Mill Buttermilk Mix.  But don’t feel the need to limit yourself to those two.  Go crazy and get creative.  Like try some blueberry whole wheat mix or something else unique.

Now add a bit of milk to the pancake mix until a batter forms.  Roll out and top with butter, sugar and cinnamon.  Then roll up and bake. 

Easy. 

If you want to sub in banana for the sugar or nut butter for the butter…that could be fun. Let me know how it goes.

Pancake Mix Cinnamon Rolls

The easiest cinnamon rolls of your life.

Yield: makes 6 small cinnamon rolls (could probably feed 1.25 people) ;)

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Ingredients:

1 cup pancake mix of choice (spooned into measuring cup; I used Bob's Red Mill Buttermilk Pancake Mix)

1/4 cup Almond Breeze Almondmilk Hint of Honey Vanilla

1 1/2 tablespoons butter, chopped into smaller cubes

2 tablespoon brown sugar

1/2 tablespoon cinnamon

Directions:

Preheat oven to 350ºF.  In a bowl, combine pancake mix and Almond Breeze Almondmilk Hint of Honey Vanilla until a dough forms.  If the dough is dry, add 1/2 to 1 tablespoon additional almondmilk.  Dump dough out onto a floured surface.  Roll it into a long rectangle and top with butter, sugar and cinnamon.  Roll up and slice into 6 cinnamon rolls.  Place in a greased baking dish and bake for 8-10 minutes (don't over bake).  They should look underbaked when removed from the oven.  If overbaked they will taste VERY dry.  Top with frosting/yogurt of choice or just eat plain.
