We aren’t making the broken oven saga into a series.  I just like to start these posts with some drama.  New oven is set to arrive Tuesday (insert little emoji confetti horn thing).

Nothing says summer like berries and graham crackers. 

Except maybe watermelon. 

I’ve told this story before, but one time when I was like 8 my mom bought me this horrid watermelon jumper thing.  It’s the only thing from my childhood that I remember hating.  The neckline was a giant watermelon.  It did not say summer.  It said Kylie is about to be in timeout because she’s about to freak out over how much she hates this outfit.

Why is a tart called a tart?

I’ve never had a tart tart.  And this tart is no exception to that.  It’s sweet berries topped with a heavy drizzle of dark chocolate and white chocolate.  Then it’s all piled on top of a no-bake crust because of the oven issue.  And because it’s summer, meaning I don’t really want anything to do with hot things right now.  Fruit on the other hand, I want everything to do with.

How is your watermelon consumption going? I’m up to one melon a week.  I was telling someone that Andrew and I have been eating a watermelon/week, to which he reminded me that he only had two slices of the entire thing.  It’s just so refreshing as an after dinner sweet something.  All the more reason to eat watermelon is that I recently discovered the best way to cut it (SOOO EASY).

T-minus 2 days to my RD exam.  I told myself I wasn’t going to tell many people I was taking it (just in case it doesn’t go so great), but I can’t think of one person I haven’t told.  This could be awkward.  I’m sure it’ll be fine.  Saturday I very nearly went crazy studying and told Andrew I HAVE TO GET OUT OF THE HOUSE.  So he took me to Target.  And just like that everything was right in the world.  Oh Target. 

I was thinking.  What if I used Target for my pharmacy instead of Walgreens? I would spend so much money.  That would mega test my self control.

My self control is also REALLY being tested these days since the giveaway box filled with ALL MY FAVORITE THINGS is sitting in my house calling my name at every snack time.  I need to ship it out before I start busting open a chocolate something.  For now, this tart will suffice.

No-bake Berry Tart with Graham Cracker Crust

A summer dessert bursting with fresh berries.

Yield: serves 5

Prep Time: 20 minutes

Cook Time: 1-2 hour chill time

Total Time: 20 minutes (+ inactive 1-2 hour chill time)

Ingredients:

12 graham crackers (the full sheet = 1 cracker)
6 tablespoons butter, melted
4 tablespoons honey
pinch salt
1 1/2 cups fresh berries (I used strawberries, raspberries and blackberries)
1/2 cup dark chocolate chips
1/2 cup white chocolate
2 tablespoons coconut oil, divided

Directions:

In a food processor, process graham crackers until finely ground.  Dump into a bowl and stir in melted butter, honey and salt until the mixture holds together when squeezed.  Grease a smallish tart dish (mine had a 7.5" diameter) and dump graham mixture in.  Use the bottom of a cup to firmly press down on the graham cracker crumbles and form your crust.  I made a ridge around the edge of mine, but you don't have to.  Pack it in as much a possible so the crust will hold it's shape.  Set aside. 

In two separate microwave-safe bowls, place your dark chocolate chip and white chocolate chips.  Add 1 tablespoon coconut oil to each bowl.  Microwave in 15 second increments, stirring frequently until melted.  Spoon half the dark chocolate into the center of the graham cracker crust and spread it evenly over the crust.  Place graham crust topped with melted chocolate into the freezer to harden the chocolate while you prep your berries. 

Wash and dry berries and slice the tops off your strawberries.  Remove crust from the freezer (chocolate sets fast) and pile high with berries.  Drizzle with melted white chocolate and remaining dark chocolate.  Let set in the fridge for 1-2 hours (or overnight).  Slice and serve.

The first piece is hard to get out pretty, but the following pieces should come out fine.

  1. I am convinced that a trip to Target makes everything better. (Good luck on your exam, you’re going to rock it!) I suggest that afterwards you make yourself a s’more w/ a Justin’s PB cup. That’s how I made all my s’mores when we went camping and yes, it is a game changer.
    Love how fresh this recipe is but still so chocolatey. <3

  5. The heating bill is not my friend right now. Oven temps + 90 degree weather = poor and no money for Chipotle.

  6. Bwahahahahaaa!!! Please tell me you have at least ONE picture of yourself in the horrid watermelon outfit. That would be amazeballs to see. We’ve only had one awesome watermelon so far this season. They aren’t quite ready yet where we are (Northeastern NC), but once they are we’ll plow through 2 a week for sure.
