Cookie Dough Ice Cream Cones

It’s a waffle cone wrapped in a blanket of cookie dough.

Or maybe it’s more like a cookie dough scarf since it’s just wrapped around the top.

Let me tell you where my mind is.  In light of ice cream season, I figured we needed something to fit our ice cream in.  Something besides a mug or the basic chocolate dipped ice cream cone.  Something that’ll finally help you achieve the perfect balance of cookie dough to ice cream ratio when you order chocolate chip cookie dough ice cream and disappointed washes over you because there is only 2 ½ pieces of cookie dough in the scoop.

There will be no side of disappointment served with this cone.  AND we get to solve one of the major dessert issues in the world i.e. the ice cream to cookie dough ratio.  I say it should be a 60:40 split; cookie dough:ice cream.   To dream.

Now.

I don’t think you have to add the ice cream to this cone.  If you’re feeling it you could just eat the cone + cookie dough.  That’s what I’ve been doing for a sweet treat before bed.

An enlightening story about me.  When I was younger I always favored sugar cones over waffle cones.  Maybe because I found sugar cones easier to hold and they better protected my clothes from melting ice cream? Either way, now I find myself very pro-waffle.  I haven’t any stomach space for a sugar cone.  Are you a sugar cone or waffle cone person? Tell me your ways.

Now. Photographing ice cream is my least favorite thing.  I know to make the scoops pretty you just have to make some scoops of ice cream and then put them on a parchment paper-lined baking sheet in the freezer until they are hard and then you can use them in pictures to get perfectly beautiful ice cream scoops.  But that just seems to take so long.  So this is me.  Here with half melted ice cream.

I wonder what would happen if you baked the cone with the cookie dough ring on the top?

Cookie Dough Ice Cream Cones

How to dress a waffle cone.

Yield: 4-6 cones

Prep Time: 10 minutes

Total Time: 10 minutes

Ingredients:

1/2 cup + 2 tablespoons oat flour (I used Bob's Red Mill)
1/2 medium banana, mashed (scant 1/4 cup)
3 tablespoons peanut butter (I used Justin's)
1-2 tablespoons honey
1/3 cup chocolate chips
pinch salt
4-6 waffle cones

Directions:

In a bowl, combine all ingredients except for the waffle cones.  Stir until a dough forms.  Take some of the cookie dough and wrap/press it around the top of a waffle cone.  Repeat until all cookie dough is used.  Eat with or without ice cream.

And if you want to be a complete overachiever, cover the entire cone.  Are you in?

  1. I’ve actually always been a cake cone person. I like the balance of not so sweet and crunchy with the super rich and creamy icecream. Gotta try one with cookie dough!

  2. I hate to rain on this beautiful parade, but you have your ice cream terminology mixed up! Haha- those ARE sugar cones! Still amazing and delicious, but waffle cones are the larger, thicker ones.

  8. Omg that last picture of the cone totally covered in cookie dough cracked me up! My initial thoughts were that you stuffed the cone with ice cream then covered it with cookie dough as a little sealed topper. Then you could just keep them in the freezer and pull one out anytime! Plus it’s just a snack if there aren’t 2 scoops of ice cream on top, right?
