Pizza Chicken

It’s like chicken with pizza toppings!

You could add pepperoni.  

That is fine.

Or any other things you deem pizzahh-y.  I went with herbs de provence goat cheese, sauteed orange bell peppers + onions, cherry tomatoes, fresh oregano & more cheese.

So it’s protein instead of pizza crust. I know, very paleo of me. But then again it’s not, because paleo people are anti-cheese.  How sad.  GIMME cheese, PLEASE.  A world without cheese is not a world I want to live in.  One time I tried almond cheese.  NEVER AGAIN.  It was on a pizza and it was so bad I couldn’t even eat the pizza.  

That’s bad.

This was inside my mind when thinking of this recipe…

I need another way to cook chicken since I’m currently so over rotisserie chicken.  I guess I could just not make chicken for a bit butttt I find steak boring to cook (i.e. I’m terrible at cooking it), so chicken & fish are our go-to dinner proteins of the week.  

I live with a person who’s very much like, “if there’s not meat, it’s a snack.”  And if I go too many meals without meat I absolutely feel the same as him.  He is down for some crispy chickpea-based meals from time to time.

So in searching for ways to make non-rotisserie chicken > than rotisserie chicken, I decided to pizza it.  When in doubt pizza it.  Like when you’re questioning what to do with nutella, pizza it.  Think about it.  SO MUCH JOYYY because nutella.

This pizza chicken was inspired by this pizza I ate last year.  It was the best pizza I’ve ever had, which is a big claim to make.  But it was! And now it’s a pizza chicken!  It’s a thing.  Or at least more of a thing than ‘fetch.’

Pizza Chicken

Introduce your pizza craving to Pizza Chicken! (disclaimer: you may still crave plain ol' pizza. Totally normal and acceptable.)

Yield: serves 4

Prep Time: 10 minutes

Cook Time: 15 mintues

Total Time: 25 mintues

Ingredients:

2 chicken breasts, each cut into 4 thinner breasts
2 oz goat cheese with herbs
1 orange bell pepper, sliced into strips
1/2 red onion, cut thinly into rings
1/2 cup cherry tomatoes, cut in half
3 tablespoons olive oil
1/3 cup Italian cheese mix, shredded
fresh oregano
salt/pepper

Directions:

Heat 2 skillets over medium heat with 1-2 tablespoons in each.  Season chicken breast with salt/pepper.  Place chicken in skillet and cook for ~3 minutes.  In the other skillet, place bell peppers and red onions, toss frequently until softened.  Flip chicken to the other side and cook for an additional 3 minutes, until golden brown (or until internal temp reaches 165ºF).  

Spread 1/2 oz goat cheese on each chicken breast.  Top with sauteed bell peppers + onions, cherry tomatoes, fresh oregano and 1-2 tablespoons Italian cheese.  Place under your broiler until cheese is melted.  Garnish with a bit more fresh oregano.

…and you could always put said pizza chicken on top of a leftover piece of pizza.  Did it.

  1. My husband is a prime example of “if there’s no meat, it’s not a meal.” Luckily, after a little over a year of marriage, he’s come around some. This recipe would be a nice surprise for him!

  2. This is the best! My husband is also the same. If I serve him up no meat for dinner he will honestly think it is an entree.

    Am definitely going to try this recipe- maybe even on top of a pizza dough ahhaha
