I’m typing up this post as I’m watching the VMAs. Holy smokes. You guys. It is so dirty.
I have to keep throwing my hands over my eyes and screaming oh my gosh why is she not wearing adequate clothing?
Then I just looked at Miley Cyrus’s instagram for the first time. Spare yourself. It’s so terrible.
In other news.
Is Nikki Minaj’s booty real? And I still think Taylor Swift is the best. My sister went to Belmont for college and got to help out with the CMAs one year and she said when the cars were pulling up with all the famous people everyone had their windows rolled up EXCEPT Taylor Swift who was practically hanging out her car window waving to all the people. So I like Taylor Swift. I do.
And I love Britney Spears. Britney forever.
And Kanye apologized to Taylor. Kind of. I’m never quite sure what he’s saying.
Okay. Over that.
Avocado toast has been done over and over again. Are you over it? Probably not because avocado toast and food blogs were MFEO Sleepless in Seattle-style.
But if you are over avo toast…maybe you just need an avocado toast break?
I ended up taking a break from food pictures on instagram the last two days. I went with my mom and two sisters for a weekend trip to Hyatt Lost Pines Resort to have a weekend away before my sister gets married in 3 weeks. While the food was delicious.
I just felt like a break.
I did have this 3-cheese tomato bacon grilled cheese with sweet potato fries, which was amazing. And there was a lazy rivers. And an afternoon of massages.
I’ve had probably 4 massages in my life and every time I get one I remind myself that I need to get them more often. They are so nice.
The whole weekend was nice. But now I’m happy to be home again with Andrew. Even if Justin Bieber is currently performing on our TV. Eww.
Avocado Toast Salad
Yield: serves 2
1 1/2 cup cherry tomatoes
2 tablespoons olive oil
2 scallions, roughly chopped
3 thick slices of your favorite bread (I used a focaccia)
1/2 large avocado
Preheat oven to 400ºF. On a baking sheet, toss together tomatoes, scallions, olive oil and salt. Bake for 10 minutes, or until tomatoes soften.
While tomatoes are baking, toast your bread. Mash avocado with a squeeze of lime. Top toasted bread with avocado and chop into crouton-shaped cubes. Top avocado toast-croutons with roasted tomatoes. We served ours with a side of salmon.
