I love breakfast bakes. I haven’t fully embraced that it is pumpkin season yet, but IMO pumpkin should be a year round thing!

So I definitely made this…but nearly doubled the zuke and added about 1/4 cup shredded carrots and some chopped dried plums. SO NOM. Thank you for the delicious breakfast :)
