Gingerbread Overnight Oats (+ the cutest lil gingerbread houses)

If there was a HGTV for gingerbread houses, I would want Joanna Gaines to decorate the inside of this guy.  Preferably with a kitchen that had carrara marble, white cabinets, golden fixtures, and dark, cherry wood floors.  Is that too much to ask?  I mean, the mini gingerbread house is tiny so I feel like it wouldn’t even cost that much.

Totally doable.

Thanksgiving is over which means it’s time to get crazy excited for Christmas.  I have clients until 5pm tonight but after I finish up with them I’ve got dinner prepped (deets on snapchat: immaEATthat) and then we’ll eat and head straight to the Christmas tree lot to get the biggest tree I’m allowed to get.

Was your Thanksgiving fabulous? I hope it was.  Is your Christmas tree up? I hope it is.  We spent the first part of the long weekend with Andrew’s parents.  Andrew’s mom made this orange-cognac sweet potato casserole topped with pecans and brown sugar and it was THE BEST sweet potato casserole I’d ever had.  So good that I think I already told you about it on Friday.  THAT GOOD.

OHHH and there were these grit cakes which were life changing.

Now.  These little gingerbread houses may not be life changing, but they will bring a smile to your morning…which means they are kinda life changing.  They’re festive and will make you want to light a fire and put on a scarf as you eat them because they are so totally holiday.

If you like overnight oats and you like gingerbread cookies and you like happiness, there is a statistically significant chance that you will L.O.V.E this recipe.

Gingerbread Overnight Oats (+ a mini gingerbread house!)

Yield: serves 2

Prep Time: 15 minutes (+overnight inactive chill time)

Cook Time: 10 minutes if making mini gingerbread house

Total Time: 25 minutes (+overnight chill time)

Ingredients:

2/3 cups oats
2/3 cup milk
1/2 cup yogurt (I used coconut noosa)
1 1/2 tablespoons chia seeds
1 tablespoons molasses
2 teaspoons ground flaxseed
1/2 teaspoon cinnamon
1/8 teaspoon ginger
topping: gingerbread cookie dough (homemade or store bought)

Directions:

In a bowl, combine all ingredients, except gingerbread cookie dough.  Cover and refrigerate overnight.  

Then, roll out your gingerbread cookie dough.  Use a gingerbread house stencil or freehand the walls and roof of your mini gingerbread houses.  Bake according to your gingerbread cookie directions.  Then assemble and decorate using royal icing (I used this icing recipe). 

Divide gingerbread overnight oats between two mugs/bowls.  Top each with a little gingerbread house.  So cute.  I know.

  5. Love the recipe! What type of molasses did you use? I used blackstrap molasses and they were too bitter. Are fancy molasses okay?
