Peanut Butter Cup Stuffed Banana Oatmeal Pancakes

Seemed like a good idea at the time.

AND still seems like a good idea now.  I mean, how snuggly does that pb cup look?!

So.  A bit ago I made these pancakes and put them on instagram.  They were delish, but like all things I decided they’d be more delicious with peanut butter and chocolate.  That thought led me to smoosh a Justin’s peanut butter cup into this pancake batter.  You know, just following my heart.

We were supposed to get our Christmas tree last night but Andrew came up with this ridiculous logic that since it was already dark out if we tried to pick out our christmas tree we may pick out the wrong christmas tree since we couldn’t properly see it.  

Asif.  

So we’re going tonight.  Last night I was distracted from Christmas tree shopping with a mug of hot chocolate and The Polar Express being on ABC Family.  That movie actually really creeps me out.  I feel like it has dark, spooky undertones.  YA KNOW?!

In other news…have you seen the Christmas movie line-up we’ve got for this week?! We’ve got The Grinch tonight.  The Santa Claus tomorrow (the best.  probably because I think my dad looks like a Tim Allen mixed with Dennis Quaid).  

And Elf Friday.  You will find me on my couch.  Or decorating the Christmas tree.  Oh, Christmas.

These pancakes.  

The actual pancake is hearty and oatmeal-filled (I would say oatmeal-y, but that sounds ewww. no.  so I won’t say it.).  If you eat this pancake right, every single bite can have a bit of peanut butter cup.  It can!  If you have kiddos, which I don’t so I don’t know what I’m talking about, I imagine this would be fun for them to eat.  I know my 10 year old self would have been very much pro-peanut butter cup in my pancake.

But note, these pancakes aren’t light and fluffy.  They’re a bit dense and hearty, just how I like my pancakes.

Peanut Butter Cup Stuffed Banana Oatmeal Pancakes

Yield: makes 4 small pancakes (serves 2-3)

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Ingredients:

1 large ripe banana, mashed
1/2 cup rolled oats
1/4 cup white whole wheat flour
2 large eggs
1 1/2 teaspoon cinnamon
1 teaspoon vanilla
scant 1/2 teaspoon baking powder
4 peanut butter cups (I used Justin's)

Directions:

In a bowl, combine all ingredients except Justin's peanut butter cups.  If batter seems too dry, add 1-2 tablespoons milk.  Heat a skillet over medium.  Add butter/cooking spray/coconut oil.  Use a 1/3 cup scoop to add batter to hot skillet.  Press a peanut butter cup into the center of the batter and spoon a tiny bit of oatmeal pancake batter over the peanut butter cup.  I didn't do this since I wanted the peanut butter cup to show up in the pictures, but this is just to make sure your chocolate doesn't burn.  Cook until edges of batter dull.  Flip to the other side for 1 minute, just enough time to cook the batter without the peanut butter cup burning. 

Repeat with remaining batter.  Serve!

    • My husband doesn’t like the peanut butter chocolate combo (i know!!!!! WHAT?!), so definitely make these for your husband so I can live through you.

  3. Okay first off The Santa Clause is my FAVORITE Christmas movie! Besides It’s a Wonderful Life but that’s just a classic. But seriously my brother and I would watch The Santa clause over and over again growing up, it’ the best! 
    And second off I think I’m gonna have to make these pancakes while watching Christmas movies as soon as finals are over to celebrate :) 

  4. Thank YOU for letting me know about the movie lineup!! I’m really bummed I missed last night’s movie. My husband and I made a list of Christmas movies we have to watch before Christmas and all of those movies (except for the Grinch) made the list. Looks like we’re gonna be well on our way by Friday!

  7. The elves in the polar express are really creepy looking if I do say so myself.  But these pancakes are EVERYTHING!  I mean I normally put some chocolate chips and peanut butter in my pancakes but they are sad-looking compared to these pb cup stuffed ones!
