5-minute Breakfast Oatmeal Cookie for ONE!

Oooh look, another breakfast cookie recipe.

While my favorite breakfast cookie is probably this one, I’ve recently been making this single serving version.  It’s the easiest and takes 5 minutes.

And it seems very deep dish cookie-like, which is always enjoyable.

Do you have a favorite cookie? There’s this place in Houston called Tiny Boxwoods that makes EPIC chocolate chip cookies.  They posted this picture of a mountain of cookie dough.  I mean, THAT is what dreams are made of.

I would say it’s worth coming to Houston to try their chocolate chip cookies.  I’ve heard they stack two balls of dough together before they bake them but they freeze the top ball of dough so it makes the cookie stay thick and not spread too much.  It’s genius.  And I have no idea if that’s really how they do it.  It may just be a cookie rumor.  There are far worse rumors to spread.

Now the ease of this cookie is ridiculous.  It is ready so speedy quick.

So in case you’re a person who immediately needs breakfast the second they jump out of bed and can’t stand to wait 20 minutes while something bakes in the oven…yes, if you’re that person, this cookie is for you.

If your feelings about oatmeal cookies are good feelings.  This recipe is worth a try.

Single-Serving Breakfast Oatmeal Cookie

1/2 tablespoon coconut oil, melted
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/8 teaspoon baking powder
pinch salt
topping: nut butter of choice

  1. So your saying that you could be the most impatient person (umm me) in the morning and still eat this incredible oatmeal cookie for breakfast?  I am so on board with you!  Plus its healthy with all the oatmeal and stuff! :)

  2. After cooking I added one minute of work time with almond butter, cranberries, and a banana and poured some extra maple syrup on top, similar toppings for oatmeal but much tastier with the cookie. Yum!

  3. YUM! i love that this takes no time at all to prep and that i already have every ingredient in my pantry! might even make it for dessert tonight..(;

  11. Do you have nutritional info?

  12. Who can write more clearly than you about such matters!
I promise you, nobody, I’ve seen something like this only
on https://abba.news/ru/our-reality-and-why-consciousness-is-important/. I enjoyed the article and suppose you have more such material?
If so, so please post it since it’s somewhat unusual for me at the present moment, and not only for
me, that is my view. Hopefully, I can find an in-depth manual of yours and be aware of all the news and the most
    recent data.

  13. Any suggestions for coconut oil??? Super excited to try this out

    • Melted butter would be the best substitute for coconut oil, but any other neutral-flavoured oil (not olive) would work.
