Brownie Batter No-Bake Cookies for Santa

And Santa loves brownie batter.  Because Santa is awesome.  And awesome people love brownie batter.  Yes, life really is that simple.  

Sorry for the teeth mark picture above, if you hate things like that.  I don’t mind things like that.  I think it lets you see the texture of the food.  If you can see teeth marks it =’s doughy.  And doughy things are very close to my heart.  You win friends and influence people if you bring doughy things to the table.

So one of the magical things about these, other than they taste like brownie batter, is they whip up in 5 minutes tops.  AND they also look like coal.  So if you need to give someone coal this Christmas…these cookies will say, “I love you, but you should really behave better.”

AND they really do taste like brownie batter!  Like doughier brownie batter.  It’s delightful.

You know what isn’t delightful? It’s 75 degrees outside and Christmas is in 2 days.  Ugh so annoying.  Cold weather, where are you?  That’s why I have to resort to making no-bake cookies for Santa.  Because it’s too hot to turn the oven on.  I mean, it doesn’t even have to snow, but I’d like to at least be able to wear a coat outside this time of year.  I really don’t feel like that’s such an unreasonable request.  An unreasonable request would be, “I never want to cook again, could we just eat takeout tacos for forever.”  I’m not asking for that!  I’m just asking for a bit of a cold front to blow my way.

Oh well.

My plan for today is to see clients until 2 and then head to my grandma’s house to make a boatload of tamales.  Then daydream about cold weather.  It’s gonna be a great day.

Brownie Batter No-Bake Cookies for Santa

Yield: 8 truffle-sized cookies

Total Time: 5 minutes

Ingredients:

2/3 cup + 2 tablespoons oat flour (spooned into measuring cup/spoon)
1/4 cup dark chocolate chips
3 tablespoons brown sugar
2 tablespoon dark cocoa powder
1/4 teaspoon baking soda
scant 1/4 teaspoon salt
3 tablespoons coconut oil, melted & cooled
1/2 teaspoon vanilla

Directions:

In a bowl, combine all ingredients until a dough forms.  Roll into 8 balls and serve immediately to yourself...or Santa.

  2. I was always notorious for eating spoonfuls of brownie batter growing up lol!  I love that these are no bake and don’t contain eggs so I can eat them without feeling like Im going to get sick!

  3. These look amazing! And, if it makes you feel any better, we’re looking at 70 in Connecticut on Christmas Eve. No white Christmas or coats for us.

  7. Just found your site a few weeks ago and am loving on so many recipes – this one included! I’m curious though as I don’t know much about baking especially the science part of it, but is the baking soda necessary if you aren’t actually baking them?
