…thanks for all the great feedback on my Why Not to Go on a Diet This Year post.  I’ve loved getting to read your comments and am now trying to decide on what approach I want to take for bringing you more info on mindful eating.

Now.  Pumpkin Snickerdoodle Baked Oatmeal.  

If oatmeal could dream, this is what it would dream of turing into.  The pumpkin puree keeps the oatmeal bake from being dry, which is the worst thing that could happen to an oatmeal bake. And let me tell you, it gets even more delicious if you let it sit in the fridge overnight and eat it cold in the morning.  I speak from experience! It’s like a dense, delicious cake and I may have eaten it for lunch for a couple of days with a big glass of ice cold milk.  And I slathered the whole thing in peanut butter.

I should tell you –> I’m sorry if you’re over pumpkin.  I’m not.  I can go without gingerbread for awhile (probably until like next week), but I’m pretty much good to go on sweet pumpkin things all the time.

And snickerdoodle.  I mean.  YES.

This is my most favorite baked oatmeal I’ve ever made and now I want people to sleep over at my house just so I can serve them this in the morning.  Soooo wanna come have a sleepover? I’ll make you hot chocolate, while we do face masks.  And then we’ll wake up and eat baked oatmeal and go on a long walk to talk about life.  And then we’d get our nails done.

Until we can orchestrate our get together, perhaps think of someone you love and make them this dish of LOVE.  Yes, you can be the person you love.

Pumpkin Snickerdoodle Baked Oatmeal

Yield: serves 4-5

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Ingredients:

oatmeal bake
2 1/2 cups oats
3/4 cup canned pumpkin puree
1 large egg
3/4 cup milk
1/4 cup honey
2 1/2 tablespoons butter, melted
2 tablespoons sugar
1 teaspoon vanilla
1 teaspoon cinnamon
scant 1/2 teaspoon baking soda
1/4 teaspoon salt

topping
1 1/2 tablespoon sugar
1 teaspoon cinnamon

Directions:

Preheat oven to 375ºF.  In a large bowl, combine all oatmeal bake ingredients.  In a separate small bowl, mix together cinnamon + sugar topping.  Scoop oat mixture into a greased 2-quart baking dish (mine was oval-shaped).  Spread batter to edges.  Sprinkle cinnamon sugar mix over the top.  Bake for 25-28 minutes, or until set.  Eat warm or cold.  I like mine cold, because I do.  AND top it with peanut butter if you feel so inclined.

If you leave the sugar out of the recipe and off of the top, you just have pumpkin baked oatmeal.  Still delicious, but if you do that it won't be snickerdoodle-y.  So if you're craving the snickerdoodle taste, add the sugar.

  1. Im glad to see that Im not the only one still on the pumpkin train!  Pumpkin is all year round for me, especially in my oatmeal!  Now snicker doodle and pumpkin in oatmeal makes me wanna cry with joy!

  2. Pumpkin is most definitely a year round thing! I nearly had a heart attack at the beginning of the fall when someone said on the news that there was a possibility of a pumpkin shortage! :( Also, pumpkin + cinnamon + oats= PERFECTION :D
    Oh, and your sleep over is my kind of sleep over! :)

  3. Pumpkin is most definitely a year round food! And gingerbread should be too! This oatmeal looks amazing. Yay for breakfast at every meal!
