Seared Salmon Pasta with Coconut Milk Chili Sauce

And for once it’s something dreamy that doesn’t involve cheese! What?! Who am I?

I love cheese.  Cheese.  Cheese.  Cheese.

But there is no cheese and this dish is still super satisfying and made oh so slightly creamy with coconut milk.

Let’s talk about eating pasta.

Pasta is one of the most satisfying foods.  And for whatever reason, society likes to paint this picture that we should feel guilty if we enjoy what we’re eating.  How messed up?!

You should enjoy every meal that you eat, which means every meal you eat should be satisfying.  So pull up a chair, remove any distractions (ex. phone, tv, magazine), scoop you some pasta and get ready to enjoy your meal.

This is an Asian-inspired pasta dish that’s a change up from Italian flavors.  While I’m still very pro Italian flavors (halloooo, pizza), this non-oregano-y pasta dish is something to bring some AHHHYESSSS to your life.

Also about me…I’m a fan of the thicker pasta noodle.  Angel-hair pasta, you are dead to me.  Linguine, I can work with you.  You are thicker and therefore more delicious because you are doughier.  True.

So into this pasta goes salmon, because it’s a salmon pasta.  You can sear the salmon and serve it on top of the pasta or crumble it up and mix it into the pasta.  I cut mine up a bit and mixed it into the pasta, but you do you.  Then you top the whole thing with a plethora of fresh cilantro and crushed peanuts. 

Oh it’s a dream boat.  Or, errm, plate.

Seared Salmon Pasta with Coconut Milk Chili Sauce

Yield: serves 4

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes


4, 6 oz salmon portions
8 oz Dreamfields' linguine
3 tablespoons olive oil, divided
3/4 cup light coconut milk
1 teaspoon garlic, minced
3 teaspoons sriracha sauce
1 small lemon, juiced
4 green onions, roughly chopped
1 red bell pepper, finely chopped
sea salt/pepper
garnish: crushed peanuts, cilantro, lemon wedges


Bring a large pot of water to a boil.  Add in Dreamfields' linguine and boil until al dente.  Place green onions and red bell pepper in the bottom of a colander and pour cooked pasta and pasta water over them to help them wilt a bit.  Set aside.  In a saucepan, heat 1 tablespoon olive oil.  Once hot, add in garlic and cook until fragrant.  Add in coconut milk and sriracha sauce.  Reduce heat to low and let simmer for 5 minutes, until slightly thickened.  Add in pasta and lemon juice and stir to coat.  Meanwhile, season salmon with salt and pepper.  In a skillet, heat 2 tablespoons olive oil over medium-low heat.  Add in salmon and cook for 2 minutes on all sides.  Cook until internal temperature reaches 145ºF or salmon flakes with a fork.  Divide pasta between 4 shallow bowls and top with salmon, cilantro, peanuts and lemon wedges.

I chopped my salmon up a bit and mixed it into the pasta!
