Triple Dipped Peanut Butter Chocolate Covered Pretzels

I went through a phase a couple weeks ago that got me to this point in my life.

I was at Trader Joe’s and bought a bag of dark chocolate covered pretzels and for a couple weeks they were my go to snack when I wanted something sweet.  And while the everything-at-Trader-Joe’s-is-perfect effect was operating per usu, I found myself wanting to add a bit of protein to snack time and would dunk the chocolate covered pretzels in a jar of peanut butter.  Then I was like, how completely great would it be if the peanut butter was already in the chocolate pretzel combo?  

So here we are.

Yesterday.  Let’s talk yesterday.  Everyone was faaahhhh-reaking out about it being national peanut butter day.  

I’m a day late to the party, but it’s okay because I’ve arrived now with chocolate coated peanut butter pretzels.

How was your weekend? Mine involved a pizza oven.  My boss’s husband is Italian and built an epic pizza oven for their backyard.

And now I really don’t think my life will be complete until I get a pizza oven in my backyard.  When I get it I could be known as the girl who makes fabulous homemade pizzas.  I’d probably need to order a stylish, new pizza making apron and authentic pizza oven equipment.  Like I’d need the shovel thing (pizza peel? I think that’s what it’s called.) to get the pizza into the oven without searing off my arm hair.  I’d also probably need to start ordering cheese in bulk from fancy cheese places all over the country.  Scratch that…from all over the world.  Then we’d need to buy a new fridge to store the cheese.  I’ll look into this.

You know what goes well with pizza? Triple dipped peanut butter chocolate covered pretzels.  Wait.  That’s not true.  I mean, it wouldn’t be an awful combo now that I think about it.

So these pretzels.  You dip them in chocolate then peanut butter then chocolate.  You do have to freeze the pretzels after each dipping, but it’s worth it.  Then you’ll have a nice little container of the chocolate + peanut butter combo, which is a flavor combo that I crave weekly.

In other life news, I got a new computer yesterday.  It was time.  After having to stay up until 2am when photos wouldn’t upload into Lightroom because my old computer couldn’t handle operating heavy-duty programs and was dying a slow death (at the expense of my sanity). 

Anyways, as I’m typing on the new computer, Andrew was like, how did you already get peanut butter on it?  

What can I say…my fingers ooze peanut butter.  And yours can too if you make these.  (Andrew was just standing over my shoulder as I typed that last part and he goes, wifey, that’s so disgusting.  And then he goes, I’m gonna go start the nachos).  If I didn’t marry him once I’d marry him again.  He still doesn’t like the chocolate + peanut butter combo.  WHICH MAKES NO SENSE.  But the good news is I have YOU, and YOU get me and the chocolate + PB combo.

Triple Dipped Peanut Butter Chocolate Covered Pretzels

Yield: 15 pretzel rounds (the larger kind!)

Total Time: 30 minutes

Ingredients:

3 cups dark chocolate chips, divided
1/2 cup natural peanut butter
3 tablespoons coconut oil, divided
15-20 large pretzel rounds (I used the 2"ish diameter ones, as opposed to the 1" tiny ones)

Directions:

In a microwave-safe bowl, combine 1 1/2 cups chocolate chips with 1 tablespoon coconut oil.  Heat in the microwave in 20 second increments, stirring frequently, until melted.  Dunk pretzels into the melted chocolate and allow excess chocolate to drip off (is there such a thing as excess chocolate? not sure.).  Place chocolate covered pretzels on a piece of wax paper that is on top of a baking sheet (i didn't have wax paper so I used a piece of foil rubbed down with coconut oil).  Place pretzels in the freezer for 10 minutes, or until hardened.

Now, place your peanut butter and 1 tablespoon coconut oil in a microwave-safe bowl.  Heat until thinned.  Dunk chocolate covered pretzels into the peanut butter mixture and place back on the wax paper.  Return to the freezer for 10 minutes.

Finally, melt the remaining 1 1/2 cups chocolate chips with 1 tablespoon coconut oil.  Dip frozen chocolate-pb pretzels into the chocolate and place on a clean sheet of wax paper.  Place in the freezer until hard.  I like to store my pretzels in the freezer and grab them as craved.

  2. Holy amazingness!  Now chocolate covered pretzels are great, but when you add the peanut butter coating and the chocolate drizzle, they become EPIC!

  4. Yum! FYI- you do know there’s a chocolate-covered peanut butter filled pretzel at Trader Joe’s, right? I used to devour them in high school, and then cut myself off from them after college because things were getting out of hand. I recently bought a bag for my husband and he was so offended that I had kept them from him for the 6 years we’ve been together. Needless to say, they’re that good. Yours look even better though, because more peanut butter = more happiness. 

    Check out the TJs ones though…they’re with the other chocolate stuff, not with the pretzels and chips.

  6. TJ’s dark chocolate pretzels are so delicious. I find myself eating the whole bag in one sitting, saying, just one more, now just one more. And then somehow the bad disappears. Love PB & chocolate combination and this snack looks like it would hit the spot :)
