The Best Baked Oatmeal with Walnut Streusel

So I made this streusel topped grapefruit many moons ago and when I topped this baked oatmeal with grapefruit I was like, “you look pretty, but you need a bit more ZAzing.” I’m not sure what ‘ZAzing’ means to you, but to me it means a streusel.  

Or a pop of color.  Like a pop of hot pink on your ceiling could also be classified as a ZAzing.  Like this.

I’m always so impressed with home decor blogs.  I mean, I know how much I can manipulate food to make it look even more delicious (hello, Lightroom!), so I guess home decor blogs do the same.  But gahhh I wanna live in all those imaginary/perfect spaces, even if they really aren’t that perfect in real life. 

I mean.  Look at this place.  Don’t you just feel an overwhelming calmness when you look at that?!  

I do.  

It’s so peaceful.  The only way to make it better would be to add a streusel.

Now I know that every other day I’m saying that there is some new recipe that is my favorite recipe, but that’s just because I get really excited about all the recipes I share with you.  That’s why I suck at working ahead on blog content, because I forget how delicious the food was and feel a bit meh about sharing the recipe.  I don’t wanna feel meh.  

All that to say that this is my new favorite baked oatmeal.

A hot minute ago I made us a snickerdoodle baked oatmeal.  And while that baked oatmeal was and is delish, I’m very much over snickerdoodle things at the moment and have moved to citrus.  I seriously can not stop eating oranges.  They’re the best fruit in my book.  I’m usually an apple person, but these last two weeks I want all the citrus.  I want it now golden goose-style.  

Maybe I’ll plant an orange orchard in my backyard and when we have kids they’ll always remember how we picked oranges together for fresh squeezed orange juice and everything will be sunny.  I’ll start looking into orange trees.

But for now…grapefruit.  If I’m going to eat grapefruit I prefer it not by itself.  Occasionally I’ll get a grapefruit-by-itself-craving, but I much prefer it in a salad or topped with something (i.e. a walnut streusel) OR on top of an almond butter baked oatmeal topped with a walnut streusel.  What a dream world we’re living in.

So the wondrous thing about this baked oatmeal is that it really REALLY tastes like an oatmeal cookie.  I can’t take the credit though, because it’s the baking soda that does all the work.  It just brings the cookie flavor.  AND the liquid to dry ingredient ratio is on point in this recipe.  This was the least dry baked oatmeal ever.  It’s moist and you should have it for breakfast for 3 days in a row…or that’s what I did.

Grapefruit Baked Oatmeal with Walnut Streusel

Yield: serves 4-5

Prep Time: 10 minutes

Cook Time: 45 minutes

Total Time: 55 minutes

Ingredients:

baked oatmeal
2 cups rolled oats
2/3 cup milk
1/2 cup natural almond butter
1/4 cup maple syrup
2 1/2 tablespoons butter, melted
1 large egg
1 teaspoon vanilla
1 teaspoon cinnamon
scant 1/2 teaspoon baking soda
1/4 teaspoon salt

topping
1 small grapefruit, thinly sliced & skin cut off
1/3 cup walnuts, finely chopped
1 1/2 tablespoon brown sugar
1 1/2 tablespoon butter, melted
1 tablespoon flour

Directions:

Preheat oven to 350ºF.  In a bowl, combine all baked oatmeal ingredients.  Pour into a greased oval dish (I greased mine with coconut oil).  Top with thinly sliced grapefruit.  In a separate bowl, combine walnuts, brown sugar, butter and flour.  Sprinkle this walnut streusel mixture over the baked oatmeal.  Bake for 45 minutes.
